1 cup brown sugar
1 cup white sugar
1 cup buttermilk
1 cup coconut (optional)

4 eggs
¾ cup white sugar
2 tablespoons white sugar
½ cup all-purpose flour
3 tablespoons all-purpose flour

1 teaspoon baking powder
1 cup butter

1 egg yolk
2 tablespoons cocoa powder, or more to taste

Steps:

  • Preheat oven to 320 degrees F (160 degrees C). Grease a 9-inch square baking dish.
  • Beat eggs and 3/4 cup plus 2 tablespoons sugar in a large bowl using an electric mixer fitted with the whisk attachment until smooth. Carefully add 1/2 cup plus 3 tablespoons flour, ground walnuts, and baking powder; mix batter thoroughly until there are no lumps. Pour batter into the baking dish.

1 stick (1/2 cup) unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1 1/4 cups all-purpose flour

3/4 pound plums (4 to 5 medium), sliced
confectioners' sugar for sifting over cake

  • Make streusel:

1 Cup Brown Sugar, firmly packed
3 Cups Flour
2 Eggs
1 Cup Sour Milk or Buttermilk
1 tsp. Baking Soda
1/4 tsp. Salt
1 Cup Chopped Dates
1 Cup Chopped Nuts

Steps:

  • Soft flour and mix with butter, sugar and brown sugar until fine as corn meal. Remove 1 Cup and save for topping. To remainder, add eggs, milk, baking soda and salt. Mix well and pour into 2 8 x 12 pans. Cover with a cup of chopped dates and a cup of nuts. Pat remaining cup of mix over all. Bake at 375 degrees for 20 to 25 minutes. Freezes well. Better served warm.

8 (5 ounce) bone-in, skin-on chicken thighs
2 teaspoons kosher salt
1 tablespoon olive oil
½ cup diced onion
1 pinch kosher salt
1 tablespoon white sugar
2 cloves garlic, minced
1 medium orange, zested
⅔ cup freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
2 cups chicken broth
1 pinch ground cinnamon
1 pinch cayenne pepper
⅛ teaspoon freshly ground black pepper
1 tablespoon caraway seeds
1 splash water, or as needed
1 teaspoon grated orange zest

Steps:

  • Generously season chicken thighs on both sides with 2 teaspoons kosher salt.
  • Heat olive oil in a large cast iron skillet over high heat. Add chicken, skin-side down, to the hot oil and sear until skin is golden brown and releases from the bottom of the skillet, 4 to 5 minutes. Turn and sear on the other side for 3 to 4 minutes. Turn off the heat and remove chicken to a plate. Drain fat from the skillet and reserve for another use.
  • Preheat the oven to 350 degrees F (175 degrees C).

  • Return to the oven and bake, uncovered, until no longer pink at the bone and the juices run clear, about 20 more minutes, adding a splash of water if the liquid dries out. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove from the oven and baste again. Garnish with grated orange zest and serve.
