2 teaspoons vanilla extract
2 eggs
2 ⅓ cups all-purpose flour
¾ cup unsweetened cocoa powder
1 ¼ tablespoons ground cinnamon
1 teaspoon baking soda
1 ½ cups milk
½ cup chopped walnuts

Steps:

  • Thoroughly grease bottom and sides of a 2-quart heat proof mold or 9 inch bundt pan. Sprinkle with white sugar and tap out excess.
  • n large mixer bowl, beat butter, sugar and vanilla until light and fluffy. Add eggs and blend well.
  • In separate bowl, stir together flour, cocoa, cinnamon and baking soda; add to butter mixture alternately with milk until well blended. Stir in the chopped nuts.
  • Spoon batter into a greased mold. Cover with piece of greased aluminum foil, greased side down. Fold down edges of foil around rim; fasten securely with string.

1-1/2 cups sugar, divided
1 cup buttermilk
1/2 cup canola oil
2 eggs, separated
2 ounces German sweet chocolate, melted
1-3/4 cups all-purpose flour
1/4 teaspoon plus 1/8 teaspoon salt, divided
1/4 teaspoon baking soda
2 cups heavy whipping cream
1 cup confectioners' sugar
1/3 cup baking cocoa
1/4 teaspoon almond extract
1/4 cup creme de cacao
1/2 cup ground almonds

Steps:

  • Grease and flour two 9-in. round baking pans; set aside. In a large bowl, beat 1 cup sugar, buttermilk, oil, egg yolks and melted chocolate until well blended. Combine the flour, 1/4 teaspoon salt and baking soda; gradually beat into sugar mixture until blended., In a large bowl with clean beaters, beat egg whites until soft peaks form. Gradually beat in remaining sugar, 1 tablespoon at a time, on high until stiff peaks form. Fold into batter., Transfer to prepared pans. 1/2 cup sugar
1/2 cup water
60 g butter
1/2 teaspoon bicarbonate of soda
1 tablespoon cocoa
1 cup self raising flour
1 egg, beaten

Steps:

  • Preheat oven to 180 degrees c.
  • Place sugar, water, butter, bicarb soda& cocoa in a saucepan& bring to the boil.
  • Once boiling, time for 2 minutes, then remove from heat.
  • Grease& line base of a loaf pan.
