2 cups Granulated Sugar
3 cups + 2 Tablespoons All-Purpose Flour, separated
1 teaspoon Salt
1 teaspoon Baking Soda
1 ¼ cups Vegetable Oil
4 large Eggs
1 teaspoon Vanilla Extract
2 cups Fresh Strawberries, diced, drained, tossed in Flour

Steps:

  • Lightly grease two loaf pans. Approx. 8-1/2 x 4-1/2
  • Remove tops from berries, rinse well. Set aside.
  • Sift the flour.
  • Measure level cups of flour, place in a large mixing bowl.
  • Add the sugar.
  • Add the salt.
  • Add the baking soda.
  • Whisk together to combine.
  • Place the oil in a medium sized mixing bowl.
  • Add the eggs.
  • Add the vanilla extract.
  • Whisk together until combined.
  • Add the wet ingredients to the dry ingredients, stirring gently to combine.

1 pint strawberries, rinsed, hulled, quartered, and mashed with a fork
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
2 large eggs

Steps:

  • Preheat oven to 350 degrees. Butter an 8-by-4-inch loaf pan. In a small saucepan, bring strawberries to a boil over medium heat. Cook, stirring, 1 minute. Set aside.

1/4 cup unsalted butter
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup canola oil
2 large eggs
1 teaspoon vanilla bean paste
1 cup buttermilk
3 cups strawberries, hulled and chopped

  • set oven at 350 degrees. grease an 8x8 square pan with butter and dust with flour, set aside.
  • in a bowl, combine flour, baking powder, and salt; set aside.
  • in a mixing bowl, whip butter. when light, add sugar followed by oil. once the ingrediants are combined, add the eggs, one at a time, finish this step by adding the vanilla.
  • now your going to alternate the next ingrediants in 3 cycles. while the mixture is going add 1/3 of the dry mixture,followed by 1/3 of the buttermilk. repeat 2 more times. you may need to stop the mixer and scrape down the sides,and don't forget the bottom of the mixing bowl, as heavier ingrediants sometimes get stuck at the bottom and do not mix fully.
  • now that the ingrediants have made a heavy batter, turn the mixer off & fold the strawberries into the batter.
  • pour the finished batter into the prepared pan. cook for 55 minutes to 1 hour.
