BOK CHOY, CARROT, AND APPLE SLAW

Bok Choy, Carrot, and Apple Slaw image

Yield Serves 4

Number Of Ingredients 7

1 pound baby bok choy (4 to 6 heads), halved lengthwise
Coarse salt and fresh ground pepper
1 apple, peeled and cut into matchsticks
2 large carrots, shredded
3 tablespoons fresh lemon juice
1 tablespoon vegetable oil
1 teaspoon finely grated peeled fresh ginger

Steps:

  • Rinse the bok choy under cold water to remove grit. Cut crosswise into thin strips; place in a large colander, and sprinkle with 1 teaspoon salt. Toss to coat. Top with a plate that fits inside the colander; weight with a heavy object (such as a skillet or canned goods). Set aside in sink to drain.
  • In a large bowl, mix apple, carrots, lemon juice, oil, and ginger. Add bok choy; season with salt and pepper. Toss.

Tips:

  • Choose the right bok choy. Look for heads that are firm, with no signs of wilting or bruising. The leaves should be a deep, vibrant green.
  • Wash the bok choy thoroughly. Cut off the root end and remove any wilted or damaged leaves. Separate the leaves from the stem and rinse them thoroughly under cold water.
  • Shred the bok choy thinly. Use a sharp knife or a mandoline to shred the bok choy leaves into thin strips. This will help them absorb the dressing better.
  • Use a variety of other vegetables. In addition to bok choy, this slaw also includes carrots and apples. You can also add other vegetables, such as cabbage, broccoli, or radishes.
  • Make the dressing ahead of time. The dressing for this slaw can be made up to 24 hours in advance. This makes it a great option for a quick and easy meal.
  • Serve the slaw immediately. This slaw is best served fresh. The longer it sits, the more the vegetables will wilt and the dressing will lose its flavor.

Conclusion:

Bok choy, carrot, and apple slaw is a healthy and delicious side dish that is perfect for any occasion. It is packed with nutrients, including vitamins A, C, and K, and fiber. The dressing is made with a combination of mayonnaise, vinegar, and honey, which gives it a sweet and tangy flavor. This slaw is sure to be a hit with your family and friends.
