PORK CHOPS SMOTHERED IN CARAMELIZED ONIONS

Pork Chops Smothered in Caramelized Onions image

I created this dish for my husband, as he loves the flavor of deeply caramelized onions. It was a big hit and is sure to become one of our regular meals. I served it with homemade applesauce and skillet country potatoes. Yummm!

Time 45m

Yield 2 serving(s)

Number Of Ingredients 9

2 boneless pork chops, with as much fat removed as possible
1/2 teaspoon garlic powder
1/4 teaspoon ground sage
1/4 teaspoon ground thyme
1/4 teaspoon salt
1/4 teaspoon black pepper, freshly ground
3 tablespoons butter
1 cup onion, thinly sliced
2 teaspoons sugar

Steps:

  • Season both sides of pork chops with garlic powder, sage, thyme, salt and pepper.
  • Melt 2 tbs. butter in a large skillet over medium heat, evenly coating the bottom of the skillet.
  • Increase heat to medium-high. Cook both sides of chops for 10-15 minutes until lightly browned. (Note: It is okay if the chops are not completely done, as there is more cooking time to come.).
  • Push chops to outside edges of skillet. Melt the remaining 1 tbs. butter in the center of the skillet and add onions to the center of the skillet, sprinkling with sugar.
  • Replace skillet cover and cook for 10 minutes, frequently tossing and stirring onions with a spatula. Onions are caramelized when tender and medium-brown in color. My husband prefers cooking them until slightly burned, as the flavor intensifies. (Note: Don't forget to watch your chops to make sure they don't burn.).
  • Check chops for doneness before serving. They will be done when a fork piercing the thickest part of the chop draws clear juice. If the juice is pink, cook chops a bit longer until done. (Note: Make sure to watch onions, so they don't burn.).
  • Serve pork chops with caramelized onions piled on top.

PORK LOIN CHOPS WITH MUSHROOM ONION GRAVY

My own concoction. I prefer to use self rising flour because it gives a lighter coating, but feel free to use plain/all purpose flour.

Categories     Pork

Time 50m

Yield 4 serving(s)

Number Of Ingredients 10

2 tablespoons olive oil
1 red onion, thinly sliced
1/2 cup mushroom, thinly sliced
2 garlic cloves, finely chopped
4 pork loin chops
1/2 cup self rising flour
salt and pepper
2 cups chicken stock (cube is fine)
2 tablespoons cold water
1 tablespoon flour (leftover from dredging)

Steps:

  • Heat olive oil in large fry pan.
  • Add onion and cook 5 minutes then add mushrooms and cook 2-3 minutes.
  • Add garlic and cook 1 minute.
  • In the meantime, mix the self rising flour with salt and pepper to taste in a shallow dish and dredge the chops. Save 1 tablespoon of the flour for later.
  • With a slotted spoon, remove the veggies from the pan and set aside.
  • Brown the chops about 2-3 minutes each side and remove from the pan.
  • Return the veggies to the pan, add the chicken stock and place the chops on top, moving them around so they become immersed in the liquid.
  • Bring to a boil then lower the heat. Cover and simmer 10-15 minutes until pork is tender.
  • Remove pork to a plate and keep warm.
  • Mix the leftover tablespoon of dredging flour with the cold water and stir into the pan until thickened.
  • Spoon gravy over chops to serve.

Tips:

  • Choose the right pork chops: Look for boneless pork loin chops that are about 1 inch thick and have a good amount of marbling.
  • Marinate the pork chops: Marinating the pork chops in a mixture of olive oil, garlic, herbs, and spices will help to tenderize them and add flavor.
  • Cook the pork chops over medium heat: Cooking the pork chops over medium heat will help to prevent them from drying out.
  • Use a meat thermometer: The best way to ensure that the pork chops are cooked to the proper temperature is to use a meat thermometer. Pork chops should be cooked to an internal temperature of 145 degrees Fahrenheit.
  • Make sure the onion marmalade is well caramelized: The onion marmalade is a key component of this dish, so make sure that it is well caramelized before adding it to the pork chops.

Conclusion:

These boneless pork loin chops with onion marmalade are a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are tender and juicy, and the onion marmalade adds a sweet and savory flavor. This dish is sure to be a hit with your family and friends.
