BONNIE'S BLUEBERRY MUFFINS
I combined a favorite yellow cake recipe with a muffin recipe to come up with this light, sweet muffin when we first opened the restaurant in 1980. At that time, we were the only ones int he area who served muffins. Now many restaurants feature homemade muffins, but somehow my blueberry variety has always remained a favorite with our guests.-Bonnie Ebenhoeh, Heritage House, Chesaning, Michigan

EASY BLUEBERRY MUFFINS I
These muffins are absolutely delicious. The secret is in NOT mixing the batter too much: the less you mix, the better the muffins are. You can replace the blueberries with chocolate chips to make an even better muffin--so my kids say.

LEMON BLUEBERRY MUFFINS
This recipe goes back to a Milk Calendar, which I think was in the 80's. It was a long since favourite, and after making it yesterday, the final muffin was fought over! The cornmeal gives an interesting texture, and the lemon addition is fantastic!

Tips:
- Use fresh or frozen blueberries: Fresh blueberries are ideal, but frozen blueberries work well too. If using frozen blueberries, thaw them before using.
- Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
- Fill the muffin cups to the top: This will help the muffins rise evenly.
- Bake the muffins at a high temperature: This will help them rise quickly and develop a golden brown crust.
- Let the muffins cool before serving: This will help them set and make them easier to handle.
Conclusion:
These blueberry muffins are a delicious and easy-to-make treat that are perfect for breakfast, lunch, or a snack. They are also a great way to use up fresh or frozen blueberries. With a few simple ingredients and a little bit of time, you can enjoy these delicious muffins in no time.
