2 pounds lean ground beef (90% lean)
2 cans (16 ounces each ) kidney beans, rinsed and drained
2 cans (15 ounces each ) tomato sauce
1-1/2 cups salsa
1/2 cup water or reduced-sodium beef broth
4-1/2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon salt
Optional toppings: Corn chips, sliced jalapeno peppers and shredded cheddar cheese

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain. Transfer to a 4- or 5-qt. slow cooker. Stir in remaining ingredients. Cook, covered, on low until heated through, 5-6 hours. If desired, serve with optional toppings.

The chili starts off the same for everyone: browned seasoned beef, a dose of veggies, black beans, tomatoes and a little bit of tomato sauce. At this point the kids' version is ready! To up the ante for the adults, I added a bit of beer, beef stock, more chili powder, a minced jalapeno and brown sugar to round it out.

1 pound ground beef
1 tablespoon ground cumin
3 teaspoons chili powder
Salt and pepper
3 cloves garlic, minced
1 medium white onion, diced
1 green bell pepper, diced
One 15-ounce can black beans, drained and rinsed
One 14.5-ounce can diced tomatoes
One 8-ounce can tomato sauce
1 cup stout beer, such as Guinness
1 cup beef stock
1 tablespoon minced jalapeno
1 tablespoon brown sugar
Lime juice, optional
Garnishes: shredded Cheddar, sour cream, sliced jalapeno, sour cream, torn cilantro sprigs
Serving suggestion: cornbread

Steps:

  • Let's make the kids' version first. In a large pot, brown the ground beef all over, until no longer pink. If you need to drain the fat, go right ahead! Add the cumin, 1 teaspoon chili powder and a good pinch of salt. Saute for a minute or so. Add the garlic, onion and bell pepper. Saute until the veggies soften and the garlic is fragrant, another couple of minutes.
  • Add the beans, diced tomatoes and tomato sauce. Stir to combine and let simmer for 10 minutes. Taste it. The kids will dig that, right?
  • Ladle out about a cup for each of your littles. Top each bowl with shredded Cheddar and serve cornbread on the side!
  • Now let's finish this out for the adults. To the pot, add the beer, beef stock, jalapeno, brown sugar and the remaining 2 teaspoons chili powder. It will feel pretty soupy at this point, but let it simmer for another 20 minutes or so, stirring once in a while. Taste it one more time for any seasoning adjustments. Maybe a little salt? Lime juice? Go for it.
  • Serve it with shredded cheese, sliced jalapeno, sour cream and torn cilantro sprigs. Boom.

1 (15 ounce) can pinto beans, drained

Steps:

  • In a large saucepan, cook ground beef, garlic and onion over medium heat, stirring until beef is browned, about 10 minutes.
  • Drain well.
  • Stir tomatoes with liquid, broth, chili powder, cumin, oregano and cayenne pepper into beef mixture.

1 (28-ounce) can whole tomatoes, including liquid

1-ounce unsweetened chocolate, chopped
1 (19-ounce) can kidney beans, rinsed and drained
Rice, as an accompaniment
Toppings: Tortilla chips; sour cream; grated cheddar; chopped red onions; chopped jalapenos; diced avocado; minced cilantro; etc.

Steps:

  • In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. I begged and begged for the recipe. Finally, to get rid of me, they gave it to me! (You have no idea how persuasive I can be!) It is our go-to chili, and you won't believe how easy it is to make and how good it tastes! You won't ever need another recipe for chili! This one is no fail! Enjoy!

4 - tall cans chili (28 oz. size)
1 - large can pinto beans- 15 ounces

2 - pounds lean hamburger, browned and drained
1 - package chili seasoning
6 - teaspoons cumin, or to taste

1/2 - can tomato sauce
1 - fine chopped onion

Steps:

  • Brown the meat and onions in a large skillet. Add the seasonings, tomatoes, and tomato sauce. Simmer for about 15 minutes.
  • Add the cans of chili, stir, and simmer for about a half hour. If you allow it to sit overnight and let the flavors blend, it is awesome. I heat it up in the crockpot the next day. Great for get togethers! Enjoy!
