2 cups all-purpose flour
8 cups cornflakes cereal, crushed
2 teaspoons salt, plus more to top
2 teaspoons freshly ground black pepper
2 teaspoon garlic powder
4 large eggs
4 tablespoons melted butter, plus more, to taste
3/4 cup hot sauce
2 teaspoons Worcestershire sauce
3/4 cup ketchup
1/4 to 1/2 cup finely chopped chipotles in adobo sauce
1/4 cup honey
1 teaspoon garlic powder
1/4 cup lime juice
Chopped cilantro, to top
Lime wedges, to serve
3/4 cup BBQ sauce
1/2 cup honey
1/4 cup bourbon
1 cup orange marmalade
1/3 cup hoisin sauce
1/4 cup rice vinegar
2 tablespoons sriracha, plus more to taste
1/4 cup toasted sesame seeds
Chopped chives, to top

Steps:

  • Preheat oven to 400°F. Line a couple of large baking sheets with parchment paper. Set aside.
  • Place the chicken pieces in a large bowl. In a separate bowl, combine the flour, salt, pepper, and garlic powder. In another bowl, add the crushed cornflakes. In one last bowl, whisk the eggs.
  • Dip the chicken, one piece at a time, into the flour, then the egg, then roll in the cornflakes. Make sure to fully coat, and place the chicken on one of the prepared baking sheets. Repeat until all of the chicken has been coated.

1 heaping Tablespoon of Baking Powder
Lawrys Seasoning Salt to taste, optional

Steps:

  • Prepare the chicken wings and pat them dry with paper towels.
  • Line a baking sheet with aluminum foil.
  • Place a wire rack in the baking pan.
  • Spray racks with cooking spray to prevent sticking.
  • Place the flour in a large mixing bowl.

1 tablespoon soy sauce
1 tablespoon lime juice, from 1 lime
3 tablespoons clover honey
1 tablespoon Korean chili paste
1 tablespoon soy sauce
2 teaspoons sesame oil
2 teaspoons lime juice
1 clove garlic, peeled and smashed

Steps:

  • For the wings: Place the wings in a resealable plastic bag. To the wings, add the sesame oil, soy sauce and lime juice. Seal the bag and mix the wings around to coat in the marinade. Place in the refrigerator and marinate for 3 hours.
  • Preheat the oven to 425 degrees F.
  • Spread the wings on a rimmed baking sheet and bake for 20 minutes.

Steps:

  • For the sweet hot sauce: Combine the ketchup, honey, brown sugar, sriracha, mustard, vinegar, cayenne and 2 tablespoons water in a large bowl and whisk vigorously until everything is mixed well.

½ cup butter
2 tablespoons distilled white vinegar

2 lbs boneless chicken breasts, in cubes about 1 1/2 inches wide
4 eggs
1/2 cup flour
1 -2 cup plain breadcrumbs
1/2 cup milk
salt
pepper
garlic powder
red cayenne pepper
buffalo wing sauce

Steps:

  • Prepare an oven pan (cookie sheet should work) with non-stick cooking spray.
  • Preheat oven to 400 degrees Fahrenheit.
  • Set aside 2 medium-sized mixing bowls.
  • Prepare 1 large plate or shallow pan with enough bread crumbs to coat the surface. If using plain or homemade breadcrumbs, add salt, pepper, garlic powder, and a couple of shakes of cayenne pepper to taste; keep breadcrumbs off to the side, you may need more.
  • Add cut up chicken cubes into one of the medium-size mixing bowls, pour milk over chicken, just enough to cover the chicken; you do not need more than this. Set bowl aside for later.
  • Add flour into the other mixing bowl. Dip chicken into flour, coating entirely. You may need to add flour as you go.
  • Add eggs to the milk mixing bowl used earlier; if there is some leftover milk just mix with eggs.
  • Dip about 5 or 6 cubes of chicken at a time in egg mixture.
  • Coat all sides of the chicken in the breadcrumb plate.
  • Add to prepared oven pan.
  • Once all the chicken is added to pan, spray the top with the cooking oil (we use olive oil spray). Season with more salt and pepper, just enough to taste.
  • Put in oven and cook for 20 minutes.
  • Turn pieces of chicken over, spray again with cooking spray, season with salt, pepper, and garlic powder to taste.
  • Cook for an additional 15 minutes.

3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.

Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.
