4 zucchini, quartered lengthwise
1/2 cup freshly grated Parmesan
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon garlic powder
Kosher salt and freshly ground black pepper, to taste
2 tablespoons olive oil
2 tablespoon chopped fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside. In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste. Place zucchini onto prepared baking sheet. 1 large onion, diced
2 cloves garlic, minced
1 (16 ounce) jar spaghetti sauce
1 cup shredded mozzarella cheese

1 tablespoon olive oil
1 clove garlic, grated
2 zucchini, grated
1 teaspoon dried oregano
salt and ground black pepper to taste
2 tablespoons grated Parmesan cheese
½ cup shredded Mexican cheese blend (such as Great Value Fiesta Blend®), or more to taste

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease an 8-inch baking pan.

2 - medium zucchinis
1 - tablespoon olive oil
1/2 - teaspoon sesame oil
3 - teaspoons toasted sesame seeds
2 - tablespoons parmesan cheese from shaker
1 - teaspoon garlic salt
1/4 - teaspoon cayenne pepper

Steps:

  • Wash and trim the zucchini, peeling about half of a zucchini and leaving the rest of the peeling on. Slice the zucchini in half lengthwise into two pieces, then slice each half again. Now take each of the four pieces and cut into 1/2 inch slices. Make as uniform as possible. Prepare the second zucchini the same way.
  • Take a ziplock bag and put the oils, sesame seeds, cheese, and spices in it, add the zucchini slices. Press the air out of the bag , close it, and knead the zucchini and the oil mixture until all the zucchini slices are covered evenly.
  • Pre-heat oven to 400 degrees. Prepare a cookie sheet with parchment paper. Don't grease it. Spread the zucchini in a single layer on the parchment paper.
  • Bake the zucchini in the oven for about 20 minutes. The time will depend on your oven, climate and personal preference on how done you want it. After 15 minutes, check every two minutes until it is to your liking. Serve immediately.

1 tablespoon butter
1 tablespoon olive oil (if necessary)
1 cup diced onion
3 minced garlic cloves
7 cups zucchini, sliced (I've also used a mixture of zucchini and spinach)
1 tablespoon parsley, dried
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon basil
1/2 teaspoon oregano
2 eggs, beaten
1 1/2 cups monterey jack cheese, grated (or whatever you have on hand)
1 tablespoon parmesan cheese
1 (8 ounce) can refrigerated crescent dinner rolls
4 teaspoons mustard

Steps:

  • Pre heat the oven to 350.
  • Heat a large non stick skillet and melt you butter over a medium heat.
  • Add garlic, onion and zucchini and cook until tender.
  • Add salt, pepper, parsley, basil and oregano.
  • Mix well and set aside to cool.
  • Mix the beaten eggs and the grated cheese until combined.
  • Add your cooled veggies to your cheese and egg mixture.
  • Separate your crescent rolls out into 4 strips, so there should be two triangles to each strip.
  • Lay them in a greased 9x13 baking dish lengthwise and they should just about meet up with the walls of the baking dish and almost cover your entire baking dish.
  • Spread the rolls out by working it with your fingers to seal up the seams and for the dough to come to the side of the pan.
  • Spread mustard evenly over the dough.
  • Pour your egg and veggie mixture into your pan evenly.
  • Sprinkle with 1 T. parmesan cheese.
