375ml double cream
1 vanilla pod , split and seeds scraped out
85g plain chocolate , 70% cocoa, broken into small pieces
3 large egg yolks
50g caster sugar , plus 6 tbsp
3 ready-made chocolate brownies (up to about 200g), cut into chunks
50g cherry in kirsch (or about 3 cherries per brûlée), drained, plus more to serve if you like

Steps:

  • Heat oven to 160C/140C fan/gas 3. Put the cream into a saucepan with the vanilla seeds, then bring just to the boil. Take off the heat and stir in the chocolate until it has completely melted.
  • Boil the kettle. Meanwhile, whisk together egg yolks and 50g sugar for 20-30 seconds until thick and pale, then stir in the creamy chocolate. Divide the brownie pieces and cherries between six 200ml ramekins or dishes, drizzle with a little of the kirsch from the jar, then pour over the chocolate mix.
  • Line a roasting tin with a clean tea towel and stand the ramekins in the tin. Pour hot water halfway up the sides of the ramekins, cover the whole thing with foil, then cook for 40 mins until just set. Chill for at least 3 hrs. These can be baked and chilled up to 2 days in advance.
  • One hour before serving, make the sugary crust. Put the 6 tbsp sugar into a non-stick pan and melt evenly over a gentle heat. Once the sugar has turned a rich caramel colour, spoon it over the puddings and leave to set hard.

2 tablespoons sugar
1/2 teaspoon salt
1/2 cup cold butter, cubed
FILLING:
1 can (14 ounces) sweetened condensed milk
1 cup semisweet chocolate chips
1/2 teaspoon salt
1 can (21 ounces) cherry pie filling
1/4 to 1/2 teaspoon almond extract
Whipped cream and maraschino cherries, optional

Steps:

  • In a bowl, mix flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Press firmly onto the bottom and sides of a 9-in. pie plate. , Bake at 350° for 15-20 minutes or until golden brown. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs. Important: be sure to use only fresh eggs for this recipe.

1 ⅓ cups vanilla wafer crumbs
¼ cup butter, softened
1 (1 ounce) square unsweetened chocolate, chopped
½ cup butter, softened
¾ cup white sugar
¼ teaspoon salt

2 tablespoons chopped maraschino cherries
2 cups whipped cream, garnish
8 maraschino cherries, garnish

1 2/3 cups/215 grams all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons kosher salt
3/4 cup/170 grams unsalted butter (1 1/2 sticks), melted
1 cup/90 grams walnut pieces or halves (or use almonds)
2 tablespoons unsalted butter, chilled
1/4 cup plus 1/3 cup/115 grams granulated sugar, plus more for finishing the tart
5 tablespoons/40 grams all-purpose flour

1 pound/455 grams pitted cherries, thawed if frozen
