This version is AIP-friendly (auto-immune paleo), and the addition of the short ribs is definitely a liberty I've taken (not likely to see it in many homes in Ukraine). But beef bones and stock are classic to the dish, so it works amazingly well.

8 beef short ribs (silver skin trimmed off)
2 tbsp salt
1 1/2 tbsp onion powder
2 tbsp garlic powder
2-3 tbsp olive oil
2 qts beef bone broth
2 sprigs oregano
2 sprigs thyme
1 apple (peeled, cored, diced)
2 large beets (peeled, diced)
1/4 head medium cabbage (chopped)
1 large parsnip (diced)
2 medium carrots (diced)
4 cups water
TT salt
2 tbsp red wine vinegar
coconut cream (or sour cream if you aren't dairy free)
fresh dill (chopped)

Steps:

  • Preheat oven to 325. Toss the short ribs with the salt, onion powder and garlic powder. Put a large cast iron dutch oven (one that has a lid) on medium heat on the stove, and add the olive oil. Sear the short ribs on all sides.
  • Add the bone broth and herbs to the ribs, cover and place in the oven for 3 hours.
  • Remove the short ribs from the braising liquid and add the apple, beets, cabbage, parsnip, carrots, water, and a couple pinches of salt. Stir to combine and add the short ribs back on top. Cover and put in the oven for another 45-60 minutes, until the vegetables and short ribs are tender. Be sure to scrape the fond from the sides and add it back into the soup. Lots of flavor there.
  • Put one short rib into each bowl. Stir the vinegar into the soup, then ladle the soup into each bowl with the short rib. Add the coconut cream (or regular cream if you prefer) and fresh dill. Serve while still steaming.

1 cup grapeseed oil
4 pounds beef short ribs (1-inch thick, 3 bone racks)
Salt and freshly ground black pepper
12 cups beef stock
2 cups mirepoix, small dice carrots, celery and onions
1 cup tomato paste
1/2 cup merlot or other red wine
1 tablespoon minced garlic
3 tablespoons fresh parsley and thyme leaves, minced
3 pounds peeled potatoes, medium dice
8 ounces unsalted butter
1 tablespoon salt
1 teaspoon white pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a roasting pan over high heat with the oil. Sprinkle the ribs with salt and pepper. Add the ribs to the pan, then reduce the heat to medium. Sear on both the top and bottom of the meat, 2 to 3 minutes per side, reserving the pan drippings. After searing the ribs, add the stock, mirepoix, tomato paste, merlot, garlic and the reserved pan drippings to the pan. Tightly cover and cook in the oven for 2 1/2 to 3 hours. Remove the pan from the oven and check the ribs, which should be fork tender. If need be, continue cooking to achieve desired tenderness. Next remove the ribs and reserve the liquid to create sauce.
  • Pour the reserved cooking liquid through a strainer, then discard the remaining vegetables. In a saucepan, blend the herbs and liquid over medium-high heat. Reduce the liquid by three-quarters, yielding 3 cups of sauce. Pass the reduced sauce through a strainer, then set aside and keep warm.
  • For the potatoes: In a large pot, bring 1 gallon of water to a boil. Add the potatoes and cook until softened, 15 to 18 minutes, then drain. Pass the potatoes and butter through a food mill or ricer into a bowl. Next add the salt and pepper, and then blend with a whisk. Taste and add additional salt and pepper if needed.
  • To serve, place the mashed potatoes in the center of the plate, top with a short rib, and finish with the warm sauce. Repeat for the remaining short ribs.

3 pounds beef short ribs, cut into 3-inch pieces
kosher salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
1 yellow onion, chopped
2 tablespoons all-purpose flour
3 cups chicken broth
1 bay leaf
1 pound beets, peeled and cut into large pieces
1 cup cubed carrots
½ cup chopped celery
2 teaspoons kosher salt, or to taste
¼ cup sour cream
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Generously season short ribs with kosher salt and freshly ground black pepper. Heat vegetable oil over high heat in a heavy pot. Brown short ribs on all sides until they are dark brown, about 6 minutes; transfer to a bowl. Add onions and continue cooking over high heat until onions go from golden to dark brown, about 8 minutes; this will make a richer, darker sauce. Stir flour into the onion mixture; cook for about 1 minute. Pour in broth; add bay leaf, beets, carrots, and celery. Bring pot to a simmer. Place browned short ribs in pot, evenly distributing them among the vegetables.
  • Bake in preheated oven until meat is tender, about 2 hours. Transfer meat and vegetables to a serving platter.
  • Bring sauce to a fast simmer over high heat until it is reduced by half and slightly thickened, 5 to 10 minutes. Taste for seasoning and add more salt, if needed.

½ cup all-purpose flour for coating
2 teaspoons salt
1 pinch ground black pepper
4 pounds beef short ribs
2 tablespoons vegetable oil
1 cup water
1 cup stewed tomatoes
1 clove garlic, minced
6 potatoes, peeled and cubed
3 onions, chopped
6 carrots, chopped
1 ½ tablespoons all-purpose flour
4 tablespoons water

Steps:

  • In a bowl, combine the 1/2 cup flour, salt and ground black pepper. Roll the ribs in the seasoned flour.
  • In a large pot or Dutch oven, heat the oil and brown the ribs well on all sides. Pour in 1 cup boiling water, tomatoes, and garlic. Reduce heat to low, cover, and simmer for 1 1/2 hours, adding more water if necessary.
  • Place the potatoes, onions, and carrots in the pot. Continue to simmer for another 30 minutes to 1 hour, or until all vegetables are tender. Remove the meat and vegetables to a serving platter.

1 (14.5-oz.) can diced tomatoes, undrained
1/2 cup beef broth
1/2 cup Zinfandel wine or cranberry juice
1/4 cup all-purpose flour
1/4 cup chili sauce
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried marjoram leaves

2 cups fresh baby carrots

Steps:
