1 1/2 cups ketchup
1 cup canned whole cranberry sauce
1/2 jalapeno or serrano, optional
2 tablespoons olive oil
1 yellow onion, finely diced
2 stalks celery, finely diced
3 cloves garlic, minced
2 pounds ground turkey
1 1/2 cups stuffing mix
2 large eggs, lightly beaten
Kosher salt and freshly ground black pepper
1 sweet potato, cut into 8 wedges, then halved again lengthwise into spears

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Combine the ketchup, cranberry sauce and jalapeno in a small saucepan over medium heat. Bring to a simmer and let cook, stirring occasionally, 2 to 3 minutes. Remove from the heat, then discard the chile and set aside.
  • Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add the onion and celery and cook until both soften and start to become translucent, 3 to 4 minutes. Add the garlic and cook for another minute. Remove from the heat and allow to cool slightly.
  • Combine the turkey, stuffing mix, eggs, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Add the onion mixture and 1 cup of the ketchup sauce and stir gently until just combined, making sure not to overmix.
  • Transfer the mixture to the prepared baking sheet and shape it into a loaf. Pour the remaining ketchup sauce over the loaf and spread so that the entire loaf is covered with sauce. Bake for 30 minutes.
  • Meanwhile, toss the sweet potatoes in a bowl with remaining tablespoon oil. Sprinkle with salt and pepper. Remove the meatloaf from the oven and scatter the wedges on the baking sheet around the meatloaf. Return to the oven and cook for another 45 minutes. Remove from the oven and let rest for 5 minutes, then slice and transfer to a serving platter. Surround with the baked sweet potatoes.

2 tablespoons good olive oil
2 cups chopped Spanish onion (1 large)
1 1/2 cups small-diced celery (2 stalks)
1 pound ground beef
1 pound ground veal
1 pound ground pork
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh chives
3 extra-large eggs, lightly beaten
2/3 cup whole milk
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 1/2 cups panko (Japanese bread flakes)
Garlic Sauce, recipe follows
3/4 cup good olive oil
10 garlic cloves, peeled
2 cups chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large (12-inch) saute pan over medium heat. Add the onion and celery and cook for 5 to 7 minutes, stirring occasionally, until the onion is translucent but not browned. Set aside to cool slightly.
  • Place the beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper in a large mixing bowl. Put the panko in a food processor fitted with the steel blade and process until the panko is finely ground.
  • Add the onion mixture and the panko to the meat mixture. With clean hands, gently toss the mixture together, making sure it's combined but not compacted.
  • Place a piece of parchment paper on a sheet pan. Pat the meat into a flat rectangle and then press the sides in until it forms a cylinder down the middle of the pan (this will ensure no air pockets). Bake for 40 to 50 minutes, until a thermometer inserted in the middle reads 155 degrees F to 160 degrees F. Remove from the oven and allow to rest for 10 minutes. Slice and serve hot with the Garlic Sauce.
  • Combine the oil and garlic in a small saucepan and bring to a boil. Lower the heat and simmer for 10 to 15 minutes, until lightly browned. Be careful not to burn the garlic or it will be bitter. Remove the garlic from the oil and set aside. (I save the oil for vinaigrettes.)
  • Combine the chicken stock, butter and cooked garlic in a medium saucepan and bring to a boil. Lower the heat and cook at a full boil for 35 to 40 minutes, until slightly thickened. Mash the garlic with a fork, whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper, and taste for seasonings. Spoon the warm sauce over the meatloaf.

2 pounds ground bison
1 yellow bell pepper, stemmed, quartered, seeded, and ribs removed
1 red bell pepper, stemmed, quartered, seeded, and ribs removed
1 large sweet onion, peeled and cut into quarters
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh oregano
2 cloves garlic, halved
Coarse salt and freshly ground pepper
2 cups homemade or low-sodium store-bought chicken stock
2 cups red wine
1 cup sundried tomatoes, julienned

Steps:

  • Preheat oven to 350 degrees. Lightly oil a large baking dish; set aside.
  • Place 1/2 pound ground bison, 1 piece of yellow pepper, 1 piece of red pepper, 1 piece of onion, 1 1/2 teaspoons rosemary, 1 1/2 teaspoons sage, 1 1/2 teaspoons oregano, and 1/2 clove garlic in the bowl of a food processor; process until well combined. Transfer mixture to a large bowl. Repeat process three more times with remaining bison, peppers, onion, rosemary, sage, oregano, and garlic.
  • Add 2 tablespoons olive oil to bowl with bison mixture and season with salt and pepper; mix until well combined. Using your hands, form bison mixture into a loaf and place in prepared baking dish. Transfer to oven and bake for 30 minutes.
  • Add chicken stock, wine, and tomatoes to baking dish; bake, basting with juices every 15 minutes, until meatloaf is firm to the touch and pan juices are bubbly, about 1 hour more.
  • Let meatloaf stand 5 minutes before slicing and serving with pan juices.

1 lb lean ground beef
1/2 lb ground veal or 1/2 lb ground pork
3 medium carrots, peeled
1 medium onion, finely chopped
1 tablespoon butter
1 egg, lightly beaten
1 cup soft breadcrumbs
1/4 cup finely chopped parsley
1/2 cup finely chopped green pepper
1/4 cup parmesan cheese
2 cloves garlic, minced
1 1/2 teaspoons salt
1/2 teaspoon dried basil
1 medium tomatoes, chopped
1 teaspoon horseradish
6 chopped green olives

Steps:

  • Preheat oven to 350 degrees F.
  • In large bowl combine meats.
  • Place 2 carrots in frying pan covered with water.
  • Boil 10 minutes.
  • Drain.
  • Shred remaining carrot.
  • Set aside.
  • Saute onion in butter until browned.
  • Combine egg, bread crumbs, cheese, garlic, salt, horseradish and basil.

½ cup Italian seasoned bread crumbs

1 Spanish sweet onion, chopped
1 (16 ounce) package shredded Cheddar cheese, divided
1 (8 ounce) can tomato sauce, divided
