BOURBON AND PRALINE HAM

Bourbon and Praline Ham image

It's impossible to describe the flavor of this ham. I use dark brown sugar when I do this and real maple syrup. This is my Easter ham, Christmas ham and, if I do a ham for Thanksgiving, it's my Thanksgiving ham. The marinating time is included in the preparation time. The ham itself is really simple and easy to prepare.

BOURBON AND PRALINE HAM

Bourbon and Praline Ham image

I made this for the first time on Easter and it was wonderful. THe ham was moist and juicy. I don't think I will make ham any other way. I left out the pecans because my family is not crazy about nuts. The recipe comes from Under the Magnolias -- A Tasteful Tour of Athens -- a junior league cookbook in my collection.

SWEET BOURBON HAM

Sweet Bourbon Ham image

My dad made this ham for Christmas about 15 years ago, and we loved it. I haven't made a different ham since and haven't loved one as much.

Provided by AMYDANIELLE1

Categories     Main Dish Recipes     Pork     Ham     Whole

Time 3h35m

Yield 14

Number Of Ingredients 5

1 (8 1/2 pound) cooked bone-in ham (shank end)
40 whole cloves
1 cup firmly packed brown sugar
¼ cup bourbon whiskey
1 ½ teaspoons freshly ground black pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Remove skin and excess fat from ham, leaving a fat layer about 1/4-inch thick. Score ham in a diamond pattern with a sharp knife. Push cloves into the center of the scored diamond shapes. Place ham with cut side down into a roasting pan.
  • Bake ham in the preheated oven until an instant-read meat thermometer inserted into the thickest part of the meat, not touching bone, reads 125 degrees F (52 degrees C), about 2 hours.
  • Combine brown sugar, whiskey, and black pepper in a bowl until glaze is smooth.
  • Raise oven temperature to 375 degrees F (190 degrees C).
  • Baste ham with 1/3 the whiskey glaze. Return to oven and bake until internal temperature reaches 140 degrees F (60 degrees C), basting ham with whiskey glaze every 10 minutes. Cover ham loosely with a tent of aluminum foil if ham browns too quickly.
  • Let ham rest for 15 minutes before carving.

Tips:

  • Generously season the ham with brown sugar, Dijon mustard, and spices to create a flavorful crust.
  • Use a sharp knife to score the ham in a diamond pattern. This will help the glaze penetrate the meat and create a crispy exterior.
  • Glaze the ham every 20-30 minutes during the baking process. This will keep it moist and caramelize the glaze.
  • To make the praline glaze, use a candy thermometer to monitor the temperature of the sugar mixture. The glaze is ready when it reaches 300 degrees Fahrenheit.
  • Stir in the pecans and bourbon after the glaze has cooled slightly. This will prevent the nut from overcooking and retaining their flavor.

Conclusion:

This Bourbon and Praline Ham is a delicious and elegant dish that is perfect for a special occasion. The sweet and savory glaze, combined with the smoky flavor of the ham, creates a truly unique and memorable dish. Serve it with your favorite sides, such as mashed potatoes, green beans, and roasted vegetables, for a complete meal that your guests will love. For an extra touch of sophistication, garnish the ham with fresh herbs before serving.
