Yield 12 servings

Number Of Ingredients 7

9 to 10 pound hickory smoked ham (fully cooked), butt portion
1 teaspoon maple extract
1 teaspoon dry mustard
1 teaspoon white vinegar
1 1/4 cups sugar substitute (recommended: Splenda)
2 to 3 tablespoons bourbon
1 tablespoon whole cloves

With a sharp knife and in a "tic-tac-toe" fashion, make shallow cuts all over the fatty side of the ham, scoring 1-inch squares. Insert single whole cloves in every corner of the squares created by the cuts. Pour the glaze over the top and let drip down the ham. Place uncovered ham back in the oven and cook for another 30 minutes. Remove from oven and let stand 15 minutes before slicing.

BAKED HAM WITH BOURBON GLAZE

Baked Ham With Bourbon Glaze image

This is a classic Southern recipe for Easter or Christmas. The sweetness of the honey and molasses is cut by the bourbon and orange juice, making for a perfect glaze. Once the ham is cool and chilled, be sure to remove the fat from the drippings to save and serve with the leftovers...that is one of the best parts of the recipe!

Time 3h10m

Yield depends on size of ham.

Number Of Ingredients 5

1 smoked ham (New York State) 12 to 14 pounds
Cloves
1 cup bourbon
2 cups molasses
1 tablespoon peppercorns

Steps:

  • Remove skin from ham, leaving 1/4 to 1/2-inch of fat on ham. Score the fat into diamond shapes and insert cloves in a decorative manner. In a saucepan, bring bourbon, molasses, and peppercorns to a simmer, to cook off the alcohol -- be careful, the alcohol will flame a little. Allow to cool. Put ham on a rack in a baking pan, add 1-inch of water, baste with the glaze and bake in a preheated 350 degree oven. Depending on weight of the ham, the time will vary. It will take approximately 20 minutes per pound. Bake for 3 hours covered and last 1/2 hour uncovered, basting every 20 minutes with glaze.

Tips and Conclusion

Tips:

  • Choose the right ham: Opt for a fully cooked ham that is at least 10 pounds in weight. This will ensure that you have enough meat to feed your guests.
  • Score the ham: Use a sharp knife to score the ham in a diamond pattern. This will help the glaze penetrate the meat and create a crispy crust.
  • Make the glaze: Combine brown sugar, bourbon, orange juice, and spices in a saucepan. Bring to a boil over medium heat, then reduce heat and simmer for 15 minutes.
  • Bake the ham: Preheat your oven to 325 degrees Fahrenheit. Place the ham in a roasting pan and pour the glaze over it. Cover the pan with foil and bake for 1 hour 30 minutes, or until the ham reaches an internal temperature of 140 degrees Fahrenheit.
  • Let the ham rest: Remove the ham from the oven and let it rest for 15 minutes before carving. This will help the juices redistribute throughout the meat.
  • Serve the ham: Carve the ham and serve it with your favorite sides. Some popular options include mashed potatoes, green beans, and roasted carrots.

Conclusion:

Bourbon baked ham is a delicious and easy-to-make dish that is perfect for any special occasion. The combination of sweet and savory flavors is sure to please everyone at your table. So next time you're looking for a show-stopping dish, give bourbon baked ham a try.
