½ cup white sugar
½ cup brown sugar
3 tablespoons butter, melted
½ cup light corn syrup
3 eggs, beaten
2 tablespoons bourbon
2 cups pecan halves
1 (9 inch) unbaked deep-dish pie crust

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Mix the white sugar, brown sugar, and butter together in a bowl. Stir in the corn syrup, eggs, and bourbon; fold in the pecans. Pour the mixture into the pie crust.
  • Bake in the preheated oven for 10 minutes; reduce heat to 350 degrees F (175 degrees C); continue to bake until the pie is set, about 25 minutes more. Allow to cool completely on a wire rack before serving.

This recipe was handed down to me by my mother, who got it from my sister. It is very rich, very very tasty and admired by all.

1 pint whipping cream
1 (1 small) package of knox gelatin
5 egg yolks
1 baked deep dish pie shell
3/4 cup sugar
1/4 cup hot water
1/3 cup Bourbon (Jim Bean)

Steps:

  • Spearate and mix 5 egg yolks until light yellow.
  • Continue beating, gradually adding 3/4 cup of sugar.
  • Dissolve Knox Gelatin in 1/4 cup boiling water and add to egg mixture.
  • "Becareful not to let gelatin mixture cool before adding to egg mixture.
  • I can't stress, this is a critical step to making this pie"!
  • Add 1/3 cup Bourbon, continuing to beat.
  • In separate bowl, beat whipping cream to equal to 2 cups.
  • Add to mixture and continue to beat.
  • Pour mixture in baked pie shell.
  • **Optional - Sprinkle pie with nutmeg.
  • Place in refrigerator and let set for 6 hours.
  • Cut into thin slices and ENJOY.

I've made these pies 4 or 5 times at this point, and I still can't decide if they are merely interesting or the greatest thing ever. I will update this after the 10th making. If you are unfamiliar with pears, read up on them. Usually they need to ripen for several days once they've been purchased from the store.

1 cup all-purpose flour
½ cup white sugar
½ teaspoon salt
2 cups finely shredded mild Cheddar cheese
1 cup butter, softened
⅔ cup white sugar
2 tablespoons cornstarch
¼ teaspoon salt
10 large pears, peeled and thinly sliced
2 unbaked 9-inch pie crusts

Steps:

  • Sift flour, sugar, and salt into a mixing bowl. Stir grated Cheddar cheese into the flour mixture using a fork. Stir in butter using a wide spoon until mixture becomes crumbly. Set topping mixture aside at room temperature.
  • Preheat the oven to 400 degrees F (200 degrees C). Place pie crusts in their tins onto a baking sheet to catch drips; place crusts 1 inch apart.
  • Sift sugar, cornstarch, and salt into a small bowl. Place pears in a large mixing bowl. When oven is hot, sprinkle sugar mixture over pears and stir to combine. Pour filling evenly into the 2 pie crusts. Divide topping mixture in half and add to the top of each pie in 4 to 6 dollops; use a wide knife to spread evenly.
  • Bake on the middle rack of the preheated oven for about 18 minutes; the pears will produce a lot of liquid and will bubble over. Check pies and cover with aluminum foil if crust or topping is getting dark. Bake about 7 minutes more.
