- Preheat grill to high and oven to 350 degrees F.
- In a medium bowl, combine Cajun seasoning, cayenne, salt, pepper and 2 tablespoons canola oil. Rub mixture on both sides of the steak. In a saute pan, sear steak for 7 minutes on both sides. Place steak in a plastic bag to marinate for 1 hour in refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 12 minutes (6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Using a serving spoon, add Orange Bourbon Glaze to steak.

- Preheat the oven to 350 degrees F. Place the filet mignon in a bowl. Pour bourbon over steak and marinate for 1 hour. Remove the filet mignon from the bourbon and season with salt and pepper. Add the olive oil to a hot saute pan. Sear the filet mignon on all sides, about 1 minute per side. Place the meat in the oven and roast for 15 minutes or until medium rare. - 1. Put the black peppercorns in a wide, flat dish. Press the steaks into the peppers to coat them on all sides, then season with salt. Set aside.
- 2. Heat the oil in a large, heavy-bottomed sauté pan over high heat for 1 minute. Add the steaks, two at a time if necessary to avoid overcrowding, and cook for 3 minutes per side for medium-rare. Transfer each steak to a dinner plate and set aside.
- 3. Add the shallots to the pan and cook for 2 minutes over medium heat. Remove the pan from the heat and add the bourbon, then carefully return the pan to the stove over low heat and cook until the bourbon is almost entirely evaporated, about 2 minutes. Pour in the broth, raise the heat to high, bring it to a boil, and continue to boil until reduced and thickened, 3 to 5 minutes. Swirl in the cream and the butter and warm gently.
- 4. Pour some sauce over each steak and serve.
GRILLED BOURBON SKIRT STEAK
Here's another found recipe that I haven't tried but sounds great and I want to save. I love a good skirt steak and add the bourbon and spices and how can you go wrong. I'll be making this soon to see if it's as good as it sounds. Would be good with baked beans. Finally made this and LOVED it. I made two small changes - added a teaspoon of liquid smoke to increase that smokey flavor and a teaspoon of fresh, grated garlic as we love it. It was so easy and sooooo good. Try this and I don't think you'll be disappointed.

- Rub the steaks with the pepper.
- (The chef recommends coarsely ground versus cracked pepper so that it is less hot and spicy but I've used cracked pepper-in fact more than the recipe calls for-it's your call).
- Put the steaks in a shallow dish and pour 1/4 cup of the bourbon on them.
- Cover with plastic and let sit at room temp for 1-2 hours.
- Put the mushrooms in a small bowl, pour the boiling water over them and let them sit for 20 minutes.
- Preheat the oven to 225 degrees.
- Remove the mushrooms but save the liquid.
- Rinse the mushrooms well, cut off any tough bits and discard.
- Finely chop the mushrooms.
- Strain the liquid through a sieve lined with cheesecloth and save 1/2 cup of it.
- In a large heavy skillet, heat the oil and butter over high heat until just beginning to glisten.
- Add steaks and cook until browned, about 2 minutes a side.
- Remove from heat and add the other 1/4 cup of bourbon.
- Stand back, ignite with a long match, then shake the pan until the flames die down.
- Transfer the filets to a heatproof platter and cook in the oven until done, about 15 min.

- ~cut a strip of lemon or lime zest, mince and add to bowl.
