Time 1h

Yield 8-10 serving(s)

Number Of Ingredients 8

1 (40 ounce) can sweet potatoes, drained and cut up
3 medium eggs
1 cup brown sugar
1 (8 ounce) can crushed pineapple in juice
1/4 cup condensed milk
1/2 cup oleo, melted
2 tablespoons Bourbon
1/2 cup chopped pecans

Steps:

  • Put sweet potatoes in blender with eggs, brown sugar, milk, oleo and bourbon.
  • Blend.
  • Add pineapple last to avoid completely liquifying it.
  • Blend.
  • Pour mixture into a greased 2 1/2 qt casserole.
  • Scatter nuts over mixture.
  • Bake at 375 for 45 minutes or until it bubbles well.

Tips:

  • Boil Potatoes Until Very Tender: This will ensure that they are easy to mash and will create a smooth and creamy casserole.
  • Use a Good Quality Bourbon: The bourbon adds a lot of flavor to the casserole, so it is important to use a good quality one. Look for a bourbon that is at least 80 proof and has a smooth, mellow flavor.
  • Don't Overcook the Sweet Potatoes: Overcooked sweet potatoes will become mushy and lose their flavor. Cook them just until they are tender but still hold their shape.
  • Add the Pecans and Marshmallows Last: This will prevent them from becoming overcooked and chewy.
  • Serve the Casserole Warm: The casserole is best served warm, so make it just before you are ready to eat it.

Conclusion:

Bourbon Sweet Potato Casserole is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover sweet potatoes, and it is sure to be a hit with your family and friends. The casserole is creamy, flavorful, and has a hint of sweetness from the bourbon. The pecans and marshmallows add a nice crunch and texture. This casserole is a must-try for any sweet potato lover!
