BLT SANDWICH
A bacon, lettuce and tomato sandwich is always a good idea, but come summer, it's especially brilliant. Why? Mostly because fresh, crunchy lettuce and smoky, crispy bacon are the perfect companions to ripe, juicy tomatoes. Also, because a BLT is simply irresistible and manages to be both satisfying and light all at once-exactly what you want when the weather is warm. This recipe is for the classic BLT sandwich you know and love: bacon, lettuce and tomato nestled between two slices of toasted and mayo-schmeared white bread.

BACON, BASIL PESTO, AND TOMATO SANDWICH
If you're tired of a BLT, try a BBPT. The basil pesto is a wonderful complement to the bacon and tomato on this sandwich. During summer, when you have more basil than you know what to do with, make your own pesto. You can freeze pesto in ice cube trays for a real treat in the winter. And go ahead and pick one of those fresh tomatoes in your garden to slice down for this sandwich.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Set aside on a paper towel to drain.
- Spread 1 tablespoon pesto on the bottom slice of toast. Layer tomato slices and 3 slices bacon over each. Season with salt and pepper. Spread 1 teaspoon mayonnaise on remaining bread slices and place on top of the sandwiches. Cut sandwiches in half to serve.

PIMENTO CHEESE BLT SANDWICH
Use a very sharp cheddar to make this-it's the difference between pimiento cheese and cheesy mayonnaise.

- Preheat oven to 400°F. Bake bacon on 2 foil-lined rimmed baking sheets, rotating halfway through, until bacon is brown and crisp, 18-20 minutes; drain on paper towels.
- Meanwhile, mix cheese, mayonnaise, red pepper, and jalapeños in a medium bowl; season pimiento cheese with salt and pepper.
- Spread half of bread slices with pimiento cheese. Build sandwiches with bacon, tomatoes, mixed greens, and remaining bread slices.
- Do ahead: Pimiento cheese can be made 2 days ahead; cover and chill. Sandwiches can be assembled 3 hours ahead; wrap tightly and chill.
GRILLED PIMENTO CHEESE AND BACON SANDWICHES
This is a great variation of the classic grilled cheese sandwich. It also goes well with tomato soup.
