BRAISED PORK WITH PRUNES

Braised pork with prunes image

Delicious and comforting pork and prune dish that takes only ten minutes to prepare

Provided by Jane Hornby

Categories     Dinner, Main course, Supper

Time 2h

Number Of Ingredients 9

1 tbsp olive oil
600g pork shoulder, roughly cut into 5cm chunks
small knob butter
1 onion , sliced
1 tbsp plain flour
2 large glasses fruity rosé or white wine
300ml chicken stock
140g dried prunes (about 12)
handful fresh parsley , chopped, to serve

Steps:

  • Heat the olive oil in a flame-proof casserole pan and cook the pork, turning occasionally, until it is golden brown all over, about 10 mins. You need plenty of space in the pan, so cook in 2 batches if the meat starts to steam. Remove from the pan to a plate. Tip out any burnt bits, then add the butter and cook the onion for 3-5 mins until softened.
  • Stir in the flour, then return the pork and juices to the pan. Pour over the wine and enough stock to cover the meat. Bring to the boil, reduce to a simmer, put the lid on and cook for 45 mins, stirring occasionally. Tip in the prunes, top up with stock or water if the meat isn't covered, and cook 45 mins more, uncovered, until really tender. Serve sprinkled with parsley.

BRAISED CHICKEN WITH PRUNE SAUCE

Braised Chicken with Prune Sauce image

I recieved this recipe from a 60-year-old Russian woman while on student exchange in Moscow. Unlike most Russian dishes, this dish is relatively easy to prepare, but it is very elegant. I reccomend it with borscht and meat dumplings.

Time 40m

Yield 4 servings

Number Of Ingredients 8

4 chicken thighs
4 chicken drumsticks
Kosher salt and freshly ground black pepper
1/2 cup flour
3 tablespoons olive oil
1/4 cup white wine vinegar
1 cup dry white wine
12 large, plump dried prunes (preferably pruneaux d'Agen)

Steps:

  • Generously season chicken pieces with salt and pepper. Spread flour in a wide, shallow bowl, and dredge chicken until it is well coated. Shake off any excess flour.
  • Place a deep sauté pan (just large enough to hold the chicken pieces in a single layer) over medium-high heat for a minute or two. Add olive oil, and heat until oil shimmers. Arrange chicken pieces in pan, skin side down, and allow to sit without being moved until undersides are browned, about 3 minutes. Turn chicken, and allow to sit again until browned, 3 to 4 minutes.
  • Add vinegar, wine and prunes. Cover, and reduce heat to low. Simmer, basting occasionally, until chicken meat is tender and almost falling off the bone, about 30 minutes.
  • Using a slotted spoon, transfer chicken pieces and prunes to a platter, and keep warm. Raise heat under the pan to high, and reduce pan juices for a minute or two. Pour juices over chicken pieces, and serve.

MOROCCAN BRAISED CHICKEN

Moroccan Braised Chicken image

The prunes and spices are what makes this Moroccan dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h20m

Number Of Ingredients 8

4 tablespoons olive oil
6 whole chicken legs, (about 12 ounces each), drumsticks and thighs attached, skin removed
Coarse salt and ground pepper
1 large onion, halved and thinly sliced
1 teaspoon turmeric
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 1/2 cups large pitted prunes, (dried plums)

Steps:

  • In a large (5-quart) heavy pot, heat 2 tablespoons oil over medium-high. Season chicken generously on all sides with salt and pepper. Place 3 chicken legs in pot; cook, turning once, until browned, about 10 minutes total. Transfer to a plate. Repeat with remaining chicken and oil.
  • Add onion and 1/4 cup water to pot; cook, stirring to loosen browned bits on bottom. Add turmeric, ginger, and cinnamon; cook, stirring occasionally, until onion has softened, about 5 minutes. Return chicken to pot. Add 2 cups water and half the prunes; bring to a boil. Reduce heat; partially cover, and simmer until chicken is cooked through and very tender, about 45 minutes.
  • Transfer chicken to a platter; cover tightly with aluminum foil to keep warm. Add remaining prunes to pot; raise heat to high. Continue to cook, stirring occasionally, until sauce has thickened, about 10 minutes more. If not serving immediately, top chicken with sauce, cover and refrigerate up to 1 day in an airtight container. Otherwise, divide chicken among serving plates, and top with sauce.

Tips:

  • Choose the right chicken: For braising, bone-in, skin-on chicken pieces are best. They will stay moist and flavorful during the long cooking process.
  • Brown the chicken: Before braising, brown the chicken pieces in a large pot or Dutch oven over medium heat. This will help to develop the flavor and color of the chicken.
  • Add flavorful ingredients: Along with prunes, you can add other flavorful ingredients to the braising liquid, such as onions, garlic, carrots, celery, and herbs. These ingredients will infuse the chicken with flavor.
  • Simmer gently: Braise the chicken in a flavorful liquid over low heat for at least 1 hour, or until the chicken is cooked through. The longer you braise the chicken, the more tender and flavorful it will become.
  • Serve with your favorite sides: Braised chicken with prunes is a versatile dish that can be served with a variety of sides, such as mashed potatoes, rice, or roasted vegetables.

Conclusion:

Braised chicken with prunes is a classic dish that is easy to make and always a crowd-pleaser. With its tender chicken, sweet and tangy prunes, and flavorful sauce, this dish is sure to be a hit at your next dinner party or family gathering. So next time you're looking for a simple yet delicious meal, give braised chicken with prunes a try. You won't be disappointed!
