BRAISED PEAS WITH PANCETTA AND ONIONS

Categories     Vegetable     Side

Number Of Ingredients 5

250 grams fresh peas, shelled weight (you can substitute frozen peas - no need to defrost, add them straight from the freezer)
1 red onion, finely sliced
1 clove garlic, finely sliced
pancetta, cut into lardons
salt and freshly ground white pepper, to taste

Steps:

  • Place a little oil and a small knob of butter in a skillet over a medium heat. When the butter has melted add the pancetta and cook until it has started to brown. Turn the heat down low and add the sliced onion and garlic - stir well and let it cook it very slowly until it has softened and become golden. During the slow cooking the onion will almost break and release it's juices - it's at this stage that you add the shelled peas along with just enough water to barely cover them. Simmer until the peas are almost cooked, turn up the heat slightly to reduce the excess liquid. Season to taste and then serve at once.

Braised Peas With Spring Onions and Lettuce image

Takes only a few minutes to make, tastes like from a five star French kitchen. Don't be put off by the lettuce bit. It is unbelieavably good. You will want this at least once a month if you try it. From Jamie Oliver.

Braised Onions With Red Wine, Thyme, and Pancetta image

This is a delicious side dish that goes well with beef or chicken. Many times I have used bacon instead of the pancetta. I also use 2 cloves of garlic. This is adapted from Cooks Illustrated, Jan. 1996 edition. Hope you enjoy!

Tips:

  • Use fresh peas. Fresh peas have a sweeter, more delicate flavor than frozen or canned peas. If you can't find fresh peas, frozen peas are a good substitute.
  • Choose good quality pancetta. Pancetta is a type of Italian bacon that is cured with salt, pepper, and spices. It has a rich, smoky flavor that pairs well with the peas.
  • Don't overcook the peas. Peas should be cooked until they are tender but still have a slight bite to them. Overcooked peas will become mushy and lose their flavor.
  • Serve immediately. Braised peas are best served immediately after they are cooked. They can be reheated, but they will not be as good as when they are fresh.

Conclusion:

Braised peas with pancetta and onions is a simple but delicious dish that is perfect for a weeknight meal. It is also a great way to use up leftover peas. The peas are braised in a flavorful broth made with pancetta, onions, and white wine. The result is a tender, flavorful dish that is sure to please everyone at the table.
