Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 12

6 ounces whole-grain bread, cut into 1/4-inch cubes
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1 cup chopped yellow onion
1/2 cup diced carrot
1/2 cup diced celery
1 tablespoon minced garlic
4 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh sage
1 cup chicken stock, plus more if needed
8 quail, semi-boneless (with leg and thigh-bone, or ask your butcher to debone)

Steps:

  • Preheat oven to 425 degrees F.
  • Place the bread on a rimmed baking sheet and drizzle with olive oil and salt. Toast for 5 to 8 minutes, until crisp. Transfer to a large bowl.
  • In a heavy-bottomed skillet over medium-high heat, heat the butter until it's melted and foamy. Add the onion, carrot, celery and garlic and cook, stirring, until the vegetables are tender, about 10 minutes. Stir in the parsley, sage and chicken stock. Season with salt and pepper. Add the toasted bread and toss to combine. If you need more liquid for the bread, add more chicken stock 1/4 cup at a time. Remove pan from heat and allow to cool to room temperature
  • Preheat the oven to 350 degrees F.
  • Once the stuffing is cool, wear kitchen rubber gloves to stuff the cavity of the quails with about 1 cup of stuffing per quail. Place the remaining stuffing on the bottom of a roasting pan or large cast-iron skillet. Season the quail with salt and pepper and rest on top of the stuffing. Roast the quail for 15 to 20 minutes or until juices run clear when you pierce the skin. Serve right away.

BRAISED QUAILS WITH WILD MUSHROOMS

Braised Quails with Wild Mushrooms image

Provided by Food Network

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 11

4 quails, cleaned and trussed
Kosher salt and freshly ground black pepper
2 tablespoons butter, plus more if needed
Splash oil
1/4 pound bacon, cut into slivers
1 onion, chopped
1 tablespoon all-purpose flour
1 cup white wine
1 cup veal stock
3/4 pound assorted mushrooms, trimmed and halved (1/4 part trompettes de la mort, 1/4 part chanterelles, and 1/2 part cremini)
Small handful chopped fresh parsley leaves

Steps:

  • Season the quails with salt, and pepper. Melt half the butter with a drop of oil in a heavy casserole, and brown the quails on all sides over medium-high heat. Cook's Note: you could also use lard. Remove the quail from the pan, and set aside. Add the bacon to the pan, brown it, and remove. Finally, fry the onion until golden, adding more fat to the pan beforehand, if needed.
  • Stir the flour into the onions, and cook 1 minute. Deglaze the pan with the wine, stirring up the good bits on the bottom of the pan with a wooden spoon. Return the onions, bacon and quails to the pot. Pour over the stock, cover, and simmer until the quails are just cooked through, about 20 minutes.
  • Meanwhile, heat the remaining butter (a little more if you like) and cook each type of mushroom separate, as the various types cook differently. Season the mushrooms with salt and pepper as you go, then, at the end, toss them all together with the chopped parsley.
  • When the quails are done, remove them from the cooking liquid and keep them warm while you boil the juices, uncovered, to reduce to thin sauce consistency. Add the mushrooms to the sauce. Tilt into a serving dish, set the quails on top, and serve.

Yield Serves 4

Number Of Ingredients 19

1/2 cup chicken broth or water
1 teaspoon saffron threads
2 onions
4 garlic cloves
2 Spanish chorizo links (about 6 ounces total)
2 large vine-ripened tomatoes
6 whole jumbo quail (6 to 8 ounces each)
freshly ground black pepper
2 teaspoons unsalted butter
2 teaspoons corn or canola oil
2 tablespoons extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon crumbled dried oregano
1 large or 2 small fresh or dried bay leaves
2 fresh poblano chiles
1/3 cup packed fresh cilantro leaves
Accompaniments:
lime wedges
polenta or rice

Steps:

  • Preheat oven to 325°F.
  • In a small bowl combine broth or water and saffron.
  • Thinly slice enough onion to measure 1 1/2 cups and finely chop garlic. Remove casings from chorizo and cut sausage into 1/4-inch-thick slices. Peel tomatoes *(see below) and seed. Cut enough tomato into 1/4-inch dice to measure 1 1/2 cups.
  • With poultry shears or a sharp knife cut off necks, feet, and first 2 wing joints of each quail and discard. Pat quail dry and season with pepper and salt. In a 12-inch heavy skillet heat butter and corn or canola oil over moderately high heat until foam subsides. Add quail, breast sides down, and brown on all sides, 5 to 7 minutes total. Transfer quail to a plate.
  • In a large shallow flameproof kettle with a tight-fitting lid cook onion in olive oil over moderate heat, stirring, until pale golden. Add garlic and chorizo and cook, stirring, until garlic is softened but not browned, 1 to 2 minutes. Add cumin, oregano, and bay leaf or leaves and cook, stirring, 30 seconds. Add saffron mixture, tomato, and pepper and salt to taste and bring to a simmer.
  • Add quail to chorizo mixture and braise, covered, in middle of oven, basting every 15 minutes, 1 hour total. While quail is braising, roast and peel poblanos . Wearing rubber gloves, cut chiles into thin strips. Chop cilantro.
  • Arrange quail on a platter and keep warm. Discard bay leaf and skim any fat from chorizo mixture, if desired. Stir in chiles, cilantro, and salt to taste and bring mixture to a boil.
  • Spoon chorizo mixture around quail and serve with lime wedges and polenta or rice.
  • To peel tomatoes:
  • Have ready a bowl of ice and cold water. Cut an X in blossom end of each tomato. In a saucepan of boiling water blanch tomatoes 10 seconds. Transfer tomatoes with a slotted spoon to ice water to stop cooking. Peel tomatoes.

Tips:

  • Choosing the Right Quail: Select plump and well-dressed quail with smooth, unblemished skin. Avoid any with signs of bruising or damage.
  • Marinating the Quail: Marinating the quail in a flavorful mixture of herbs, spices, and liquids helps enhance its taste and tenderness. Experiment with different marinades to create unique flavor profiles.
  • Proper Braising Technique: Braising involves cooking the quail slowly in a covered pot with a flavorful liquid. Ensure the liquid level reaches at least halfway up the quail. Maintain a gentle simmer throughout the cooking process to achieve tender and succulent meat.
  • Cooking Time: The cooking time for braised quail varies depending on the size of the birds and the recipe. Generally, smaller quail will require around 25-30 minutes, while larger ones may take up to 45 minutes or more. Check for doneness by piercing the thickest part of the thigh; the juices should run clear.
  • Creating a Flavorful Gravy: The braising liquid used to cook the quail can be turned into a delicious gravy. Strain the liquid, skim off any excess fat, and thicken it with a cornstarch or flour slurry. Enhance the flavor by adding herbs, spices, or a touch of wine.
  • Vegetable Accompaniments: Braised quail pairs well with various vegetables. Choose hearty vegetables that can withstand the cooking process, such as potatoes, carrots, onions, and celery. Toss them in some olive oil, herbs, and spices before roasting or sautéing.
  • Serving Suggestions: Braised quail can be served as a main course with roasted vegetables and a side of gravy. It can also be enjoyed as an appetizer or as part of a larger buffet spread. Consider garnishing the dish with fresh herbs or a sprinkling of pomegranate seeds for an elegant touch.
  • Conclusion:

Braised quail is a delectable dish that combines tender and flavorful meat with a rich and savory gravy. By following these tips and techniques, you can create a memorable meal that will impress your family and friends. Experiment with different marinades, vegetables, and cooking methods to discover your perfect braised quail recipe. Enjoy this culinary journey and relish the delicious results of your efforts!
