10 chicken wings, or drumettes
6 cloves garlic, finely minced
2 teaspoons salt
1 teaspoon pepper
¼ cup lime juice
1 cup flour
oil, for frying
lime wedge
garlic, finely chopped

Steps:

  • Combine the chicken with the garlic, salt, pepper, and lime juice in a bowl until evenly coated. Cover with cling film and refrigerate for about an hour.
  • Dip each chicken wing in the flour, shaking off excess.
  • Heat oil in a large pot to about 375°F.
  • Fry half of the chicken wings at a time until dark golden brown. The oil temperature will drop to about 350°F.
  • Drain on paper towels.
  • Serve with lime wedges and fried garlic.

Brazilian fried chicken wings aka frango a passarinho. Chicken is brined in garlicky lime juice then fried to crispy, juicy goodness.

12 chicken drumettes
6 cloves garlic (finely minced)
1 tbsp salt
2 tsp ground black pepper
¼ cup lime juice
1 tbsp vodka
1 cup potato starch
oil (for frying)
Parsley (for garnishing)

Steps:

  • Mix vodka, lime juice, 1/2 of the garlic, salt and pepper in a bowl.
  • Add the chicken to the brine mixture and coat evenly. Cover with cling film and refrigerate for at least an hour.
  • Season your starch with salt and pepper. Dip each chicken wing in the starch, shaking off excess. Let sit and reach room temperature.
  • Heat oil in a large pot to 350°F.
  • Fry half the chicken wings until dark golden brown about 6 minutes.
  • Remove and sit on a cooling rack while you fry the other half.
  • Refry each batch for another two minutes each. Set aside and let cool. Optionally season with with salt, pepper and your preference for spices.

900g boneless chicken thigh (skin-on if possible)
zest and juice 2 lemons
1 tbsp paprika
1 tbsp mild piri-piri sauce
2 tbsp soft brown sugar
3 garlic cloves , crushed
3 tbsp extra virgin olive oil
2 tbsp coriander , finely chopped

Steps:

  • Place the chicken in a shallow, non-metallic dish and cover with all the other ingredients and mix everything together. Cover and chill for at least 2 hrs, or overnight if possible. Bring to room temperature 1 hr before grilling.
  • Thread half the thighs onto 2 large metal skewers, or wooden ones soaked in water for 10 mins. Repeat with the remaining thighs and another 2 skewers. Heat an outdoor barbecue until very hot, or use an oven grill. Place on the grill for 6 mins on one side, then turn over and cook for 4 mins. Cook for a few mins more on each side if they are large - keep the heat on medium so they don't burn. Remove and keep warm under foil.
