BRAZILIAN STYLE FLAN (PUDIM DE LEITE CONDENSADO)

Brazilian Style Flan (Pudim de Leite Condensado) image

I learned to make this when we lived in Brazil. It has a wonderful, creamy texture without being too heavy. Melted syrup will run down sides, forming a caramel sauce. Serve cool with a dollop of whipped cream on the side. Top it with toasted coconut and serve with a garnish of tropical fruits such as mango or pineapple. Uma delicia!

Time 3h15m

Yield 8

Number Of Ingredients 5

1 cup white sugar
4 eggs, separated
1 (14 ounce) can sweetened condensed milk
¾ cup milk, plus
2 tablespoons milk

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt the sugar in a heavy saucepan over low heat, stirring constantly. Once the sugar becomes a golden brown syrup after about 10 minutes, pour it immediately into a round baking dish, swirling so that the syrup coats all sides of the dish. Set aside to cool.
  • Place the egg yolks into a blender and blend on medium for 5 minutes, then add condensed milk, 3/4 cup plus 2 tablespoons milk, and egg whites. Continue to blend until all ingredients are combined. Pour egg mixture into the baking dish and cover with aluminum foil. Line a roasting pan with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
  • Bake in the preheated oven until a knife inserted 1 inch from the edge comes out clean, 45 to 50 minutes. The center of the flan will still be soft. Allow flan to cool before unmolding onto a plate. Refrigerate before serving.

Time 3h30m

Yield 6-8 serving(s)

Number Of Ingredients 6

1 (14 ounce) can sweetened condensed milk
1 1/4 cups milk
1 tablespoon unsalted butter
6 tablespoons powdered chocolate milk mix
6 large egg yolks
1 teaspoon vanilla extract

Steps:

  • Butter a bundt pan and then dust it with granulated sugar.
  • Pour all ingredients in the blender and beat them for 3 minutes.
  • Pour the flan in the prepared pan and bake it in a medium-low oven in bain marie for 1 1/2 hours or until a tooth pick inserted near the center comes out clean.
  • Let it cool completely, cover it with plastic foil and refrigerate it for 2 hours.
  • After that, carefully unmold it and serve the flan with whipped cream.

Tips:

  • Using a bain-marie, or water bath, will prevent the flan from curdling and ensure a smooth, even texture.
  • Make sure the oven temperature is accurate. An oven thermometer can help you calibrate your oven and ensure that the flan is cooked at the correct temperature.
  • Don't overcook the flan. Overcooked flan will be rubbery and dense. A toothpick or skewer inserted into the center of the flan should come out clean when it is done.
  • Let the flan cool completely before serving. This will help it to set and firm up.
  • Garnish the flan with fresh fruit, whipped cream, or chocolate shavings before serving.

Conclusion:

Brazilian chocolate flan is a delicious and elegant dessert that is perfect for any occasion. With its rich, creamy texture and decadent chocolate flavor, it is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give Brazilian chocolate flan a try. You won't be disappointed!
