3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. 1 tablespoon butter, softened
2 cups sliced zucchini
1 large tomatoes, chopped
1 teaspoon dried oregano
2 tablespoons whole wheat flour
1 cup low fat cottage cheese
2 eggs, beaten
3/4 cup nonfat plain yogurt
1/3 cup grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cut bread slices in half diagonally and arrange around edge of 9-inch pie plate.
  • In a medium skillet, melt butter or margarine and saute zucchini until tender, about 3-5 minutes.

1/4 cup margarine
