BREAD MACHINE SWEDISH COFFEE BREAD

Bread Machine Swedish Coffee Bread image

This is a delicious Swedish coffee bread recipe converted for use with a bread maker! My family is Swedish, and ever year we make this recipe just in time for Christmas. We always enjoy it especially on Christmas morning. We used to make a long, drawn out version that was my great-grandmother's recipe, but thanks to modern conveniences like the bread maker it takes much less time and work! I hope your family enjoys this as much as mine has.

GLUTEN-FREE BREAD IN A BREAD MACHINE

Gluten-Free Bread in a Bread Machine image

Make this gluten-free bread in your bread maker. It's not as good as normal bread, but it's pretty good if you must avoid gluten. The mixture will look more like cake batter than bread dough in your machine, don't worry, it will be okay. The loaf may sink while it's baking, leaving a crusty, crunchy bowl on the exposed end, which you will want to slice off and discard. The finished bread will be quite firm and heavy, and I recommend slicing it thin. It makes good toast, but it toasts slowly. I use my darkest toaster setting and have to run that twice to get golden brown toast.

Tips:

  • Proof the yeast: Before adding the yeast to the bread machine, dissolve it in warm water (110-115°F) with a pinch of sugar to ensure it's active and producing bubbles. This step is especially important for sugar-free bread, as the lack of sugar can slow down the yeast's activity.
  • Adjust the liquid content: Sugar-free bread tends to be drier than traditional bread due to the lack of sugar's hygroscopic properties. To compensate, increase the liquid content slightly by adding a bit more water or unsweetened almond milk. However, be careful not to add too much liquid, as this can result in a dense, gummy loaf.
  • Use alternative sweeteners sparingly: While sugar-free sweeteners can be used in small amounts to enhance the flavor of sugar-free bread, it's important to use them sparingly. Excessive amounts of sweeteners can leave an artificial aftertaste and can also interfere with the yeast's activity.
  • Choose the right flour: For a lighter, airier sugar-free bread, use a combination of all-purpose flour and bread flour. Bread flour has a higher protein content, which helps create a stronger gluten structure and results in a chewier texture.
  • Don't skimp on the fat: Adding a small amount of fat, such as butter, oil, or yogurt, to your sugar-free bread will help keep it moist and tender. Fat also helps slow down the staling process, so your bread will stay fresh for longer.

Conclusion:

Baking sugar-free bread in a bread machine is a convenient and straightforward process that yields delicious and nutritious results. By following these tips and experimenting with different flours, sweeteners, and add-ins, you can create a variety of sugar-free bread loaves that are perfect for any occasion. Whether you're looking for a healthier alternative to traditional bread or simply trying to reduce your sugar intake, sugar-free bread is a great option that offers both taste and nutritional benefits.
