6 eggs
2 medium green onions, thinly sliced (2 tablespoons)
1/4 cup reduced-fat mayonnaise or salad dressing
1 tablespoon white vinegar
1/4 teaspoon salt
1/4 teaspoon red pepper sauce
1/2 cup coarsely chopped cooked salad shrimp, thawed if frozen
1 tablespoon seafood cocktail sauce

Steps:

  • Place eggs in single layer in 2-quart saucepan; add enough cold water so it is at least 1 inch above eggs. Heat to boiling; remove from heat. Cover and let stand 18 minutes. Drain; rinse with cold water. Let stand in ice water 10 minutes.
  • Peel eggs; cut lengthwise in half. Slip out yolks; place in medium bowl. Mash yolks with fork until smooth. Reserve 1 teaspoon green part of onions for garnish. Stir mayonnaise, vinegar, salt, pepper sauce and remaining green onions into mashed yolks. Fold in shrimp.
  • Fill egg whites with yolk mixture, heaping it lightly. Just before serving, top with cocktail sauce and reserved green onions.

6 eggs, lightly beaten
2-1/2 cups 2% milk
2 tablespoons minced fresh parsley
3/4 teaspoon ground mustard
1/2 teaspoon salt
10 slices bread, crusts removed and cubed
2 cups frozen cooked salad shrimp, thawed
8 ounces sliced process American cheese, cut into thin strips

Steps:

  • In a large bowl, whisk the eggs, milk, parsley, mustard and salt. In a greased 11x7-in. baking dish, layer with bread cubes, shrimp and cheese; pour egg mixture over top. , Bake, uncovered, at 325° for 50-55 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving.

After trying to find the recipe on "zaar" without any success, low and behold she sent it to me. She said it's an old recipe they used to call "Friday Night Special". Well, I've changed the name a bit but I really think many of you out there will love it; we all (24) sure did. Everyone wanted the recipe!

6 hard-cooked eggs
1/8 teaspoon dry mustard
1 tablespoon mayonnaise
1/8 teaspoon salt
1 dash pepper
1 tablespoon capers, to the yolk mixture
2 tablespoons butter
1/4 cup flour
1 3/4 cups whole milk
2 tablespoons lemon juice
2 tablespoons sherry wine
1 cup cook shrimp
1 cup cooked mushroom
1/2 cup grated American cheese or 1/2 cup swiss cheese
1 tablespoon chopped fresh chives

Steps:

  • Devil the eggs and lay in a lightly greased 9x13" glass pyrex dish.
  • Mix butter flour and milk. Stir constantly until thickened to desired amount.
  • Add lemon juice, shrimp, mushroom, sherry cheese and chives.
  • Mix until well blended and pour over deviled eggs to cover.
  • (Instead of shrimp, you can substitute crab, tuna, etc.).

1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 cup cheddar cheese, shredded
1/2 teaspoon paprika

Steps:

  • Slice eggs in half lengthwise.
  • Remove yolks and put in a bowl and mash with a fork.
