1 1/2 teaspoons light brown sugar
1/2 teaspoon fennel seeds
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground nutmeg
Kosher salt and freshly ground black pepper
4 slices yellow American cheese
Olive oil
4 large eggs
4 English muffins
Unsalted butter
Sriracha or other hot sauce, optional

Steps:

  • Preheat the oven to 450 degrees F.
  • In a large bowl, spread the pork out and sprinkle evenly all over with the brown sugar, fennel seeds, rosemary, sage, thyme, pepper flakes, nutmeg, 3/4 teaspoon salt and a few good turns of pepper. Because the ingredient list is short (an unassuming bun, a smattering of pickles and a pile of caramelized onions), you'll need to season with abandon. You may be tempted to use an expensive craft cheese, but sliced American cheese is the only way to go for tradition and meltability.
