Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.

1 sheet frozen puff pastry (from a 17.3-ounce box), thawed

12 ounces pepper jack cheese, shredded (about 3 cups)
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Arrange 5 strips of the bacon in parallel rows on a baking sheet lined with parchment, the edges of the slices touching but not overlapping. Working with 1 strip at a time, arrange the remaining strips perpendicular to the first ones, weaving the strips over and under to form a lattice.
  • Spray an 8-inch square baking dish with cooking spray. Roll the puff pastry into a 12-inch square and press into the bottom and up the sides of the prepared dish. Trim the edges that overhang with a paring knife. Whisk the eggs, half-and-half, cheese, 1 teaspoon salt and a few grinds of black pepper in a large bowl until well combined. 1 cup sliced mushrooms
1/2 cup chopped green bell pepper

Steps:

  • Spray 5- to 6-quart oval slow cooker (with removable insert) with cooking spray. Unroll crescent dough; press evenly into bottom of insert and at least 1 inch up sides, working dough as needed to ensure even thickness all around.
  • In medium bowl, mix mushrooms, bell pepper, onion, ham and 1/2 cup of the cheese. Spread half of the mixture on top of crescent dough.
  • In 4-cup glass measuring cup, beat eggs, salt and pepper flakes until well mixed. 2 tablespoons vegetable oil or unsalted butter
1 pound maple-flavored and/or spicy breakfast sausage (loose in the large tube)
2 links (8 ounces) Mexican chorizo
One 14-ounce bag frozen fire-roasted or charred onions and peppers, chopped
Kosher salt and freshly ground black pepper
1 cup shredded mozzarella cheese
6 slices American cheese
One 16-ounce bag frozen shredded hash browns, thawed
4 tablespoons salted butter, melted
2 tablespoons steak rub or BBQ seasoning blend
Kosher salt and freshly ground black pepper
Hot sauce, such as Cholula or Frank's, for serving, optional
6 to 8 sunny-side up eggs, for serving, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • For the bottom layer: In a large pan on medium-high heat, add the oil, sausage and chorizo. Using a wooden spatula or, even better, a wired and wavy potato masher, break up the chorizo and sausage until they are homogenous and resemble ground beef in its tiniest form. Once broken down, continue to cook until the sausage is cooked through and orange fat is rendered from the chorizo, 10 to 12 minutes. Using a slotted spoon to drain off excess fat, transfer the mixture to an 8-by-8-inch casserole dish.
  • For the middle layer: In the same pan with the remaining fat from the meat, quickly add and saute the onions and peppers with a pinch of salt and pepper until tender and the moisture from being frozen is cooked out, 5 to 8 minutes. As before, use a slotted spoon to transfer the pepper/onion mixture to the casserole dish, draining off excess fat, and evenly spread this mixture over the top of the meat layer.
  • Next, evenly layer the mozzarella cheese over the vegetables. Then use the American cheese slices to create another layer, pressing down once done to make everything level and compact.
  • For the top layer: In a large bowl, add the hash browns, butter, steak rub and remaining fat from the pan. Season generously with salt and pepper and toss to coat. Sprinkle this layer on top of the cheese and gently press down, but not too tight so steam can escape.
  • Bake, uncovered, until the top is golden brown, 25 to 30 minutes. Serve with a shake of hot sauce or sunny-side up eggs over the top.

This is a great fill you up, stick to your ribs till lunch breakfast. Leftovers are great warmed up for late night snack. You need to make two crusts as this will be using a lid. crust recipe is from crisco. so much better than store bought in my opinion.   • Pie Crust:.
  • Add flour and salt in bowl.
  • Cut in shortening till flour resembles small peas.
  • Add water and knead till dough is soft and pliable.
  • Cover in plastic and chill in refrigerator for 30 minutes.
  • Filling:.
  • While crust is chilling cook bacon and sausage. Do not drain.
  • Whisk eggs in bowel with spices till eggs are fluffy. Set aside.
  • Putting it all together:.
  • Roll out pie crust on floured surface. Should be thin 1/8 in to 1/4 in will do nicely. (I tend to stay on the 1/8 in side.).
  • Roll dough up onto your rolling pin and roll out over 9in deep dish pie plate.
  • Gently lift up edges and help crust down into the pie plate starting in the center and moving to the outer edges to remove air out from under crust.
  • With a fork poke holes in bottom of pie crust. (this helps air escape so it doesn't bubble up in the middle.).
  • Flute edges as desired.
  • Whisk an egg yolk and brush over the crust. (this is to help seal crust so it doesn't get soggy while baking.).
  • Mix sausage and bacon together and put in pie crust.
  • Pour egg and spice mixture into the pie.
  • Top with extra sharp cheddar cheese.
  • Take the second pie crust and use as a lid on the pie.
  • Press edges of both crusts together.
  • Using a knife cut vent slices in center of crust in an x pattern.
  • Brush lid with rest of whisked yolk.
  • Bake at 350 degrees F for 30 min or until crust is golden brown.
  • A toothpick inserted in center of pie should come out clean if eggs are done.

1/2 cup Bisquick, original mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Preheat oven to 400 degrees.
  • Spray 9 x 1 1/4 inch pie plate, or 8x8x2 inch casserole dish with cooking spray.
  • Brown sausage, green pepper and onion in a 10-inch skillet over medium heat, 8 to 10 minutes, stirring occasionally, until sausage is no longer pink. Drain.
  • Mix sausage mixture, potatoes, and 1/2 cup of the cheese.
  • Spread in pie plate.
  • Stir remaining ingredients in medium bowl with wire whisk or fork, until blended. Pour into pie plate.
  • Bake 30 to 35 minutes, or until knife inserted in center comes out clean.
  • Sprinkle with remaining 1/2 cup cheese.
  • Bake 1 to 2 minutes longer, or just until the cheese is melted.
  • Let stand 5 minutes before serving.
  • Top with salsa and/or sour cream.
  • Note: For more servings, double all ingredients, use a 13x9x2 baking dish, and bake 35 to 40 minutes.

1 sheet puff pastry (approximately 8x10 inch)
12 eggs
2 minced garlic cloves
2 leeks, cleaned and chopped (discarding leaves)
2 celery ribs (chopped)
1 sprig rosemary (finely chopped)
1 lb bulk breakfast sausage (browned and drained)
3 tablespoons unsalted butter
1/2 cup parmesan cheese (grated)
1/2 cup all-purpose flour
1 quart milk
salt and pepper

Steps:

  • Directions:.
  • Melt butter in a large heavy bottomed pot (Dutch oven or stock pot) over medium heat. Add leeks, carrots, celery, garlic, and rosemary and saute until vegetables soften (about 10 min.). Stir in flour and continue to cook until the flour is well incorporated. At this point, stir in the cooked sausage, milk and parmesan cheese. Bring to a boil and then reduce heat and allow to simmer (stirring occasionally) until the gravy thickens (about 10-15 min.). Season with salt and pepper to taste.
  • Assembly:.
  • Pour thickened gravy into a medium sized casserole dish. Top with scrambled eggs. Cover the casserole dish with the puff pastry dough, crimping the dough around the edge of the dish. Lightly brush the pastry dough with egg wash. Place in preheated oven (400 degrees) and bake for approximately 30 minutes or until the pastry is golden brown.

A great and hearty breakfast pie that is sure to please everyone. I've never had anyone not enjoy it or even suggest a way to make it better. You can add more bacon if you like. Sometimes the hash browns need to cook longer, so please keep that in mind. Prep time is probably off because I make it early in the morning. Cook time should be dead on.

4 1/2 cups of thawed hash browns
1/3 cup butter, melted
1 1/2 teaspoons instant beef bouillon
1 lb bulk breakfast sausage
1/3 cup of chopped onion
3 eggs, beaten
1 cup cottage cheese
1/3 cup cheddar cheese
6 slices bacon

Steps:

  • Preheat oven too 400'F or 204'C.
  • In a medium bowl combine potatoes, melted butter, & bouillon. Mix well.
  • Place in a lightly greased pie pan.Press the potatoes down and gently up the sides to form the crust.
  • Bake for 25-30 minutes or until the shell is golden brown and crispy.
  • Remove from oven and let cool.
  • Reduce oven heat to 350'F.
  • In a Large skillet Cook bacon until crisp, crumble it. Pour off fat.
  • In the same skillet cook sausage and onions break sausage up to look like ground meat.
  • Pour off fat. Stir in eggs, cottage cheese, cheddar cheese. Allow cheese to melt. Add some of the bacon if you like reserve the rest for topping.
  • Let filling cool down a little.
  • Pour in to the hash brown pie shell.
  • Cook at 350'f for 30-35 minutes or until filling has set. Add bacon when it comes out of the oven.
  • Let stand for 5 minutes then serve.

6 cups Simply Potatoes Diced Potatoes with Onion
6 slices bacon
6 eggs
1 cup red bell pepper
1/4 cup green onion, diced
1/4 cup feta
1 cup shredded cheddar cheese
1 tablespoon salt
1 tablespoon pepper
1 tablespoon paprika
1/4 cup canned chopped jalapeno
1 tablespoon onion powder
2 (12 ounce) cans corn beef hash
2 tablespoons olive oil
1 garlic clove

Steps:

  • Cook 6 slices of bacon until crisp, drain on paper towel.
  • Drizzle olive oil in pan, heat up and cook small diced green onion and glove of chopped garlic.
  • Mix 6 eggs in a bowl.
  • Salt and pepper to taste.
  • Crumble in feta to taste.
  • Crumble in 6 slices bacon.
  • Add cooked green onion and garlic to egg mixture.
  • Mix up egg mixture and ingredients and pour into 8x8 casserole dish.
  • Pre-heat oven to 350 degrees and put egg mixture in for 20-25 minutes.
  • Chop up Red Pepper.
  • Heat up olive oil in pan.
  • Cook Simply Potatoes Diced Potatoes.
  • Add chopped red pepper.
  • Add jalapenos to taste (optional).
  • Salt and pepper to taste.
  • Add paprika.
  • Add onion powder.
  • Mix all up until potatoes are cooked.
  • Cook up 2 cans of beef hash in another pan.
  • Once egg mixture is done, take out of the oven and spread the cooked hash on top of eggs.
  • Next pour potato mixture on top of hash.
  • Cover the top of potatoes with shredded cheddar cheese.
  • Put back in oven for 5-10 minutes or until cheese is melted.

6 slice bacon, cut in pieces and fried (or can use 5 to 6 ounces bulk breakfast sausage, fully cooked)
6 large eggs, beaten
1 10 -count tube of refrigerated canned biscuits
3 to 4 oz shredded cheddar cheese (may use jack, swiss, mozzarella or any type of cheese you like)
1 1/2 c cooked hash brown potatoes (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Open the tube of canned biscuits and place all of them in the bottom of a 9 inch glass pie pan. Press together with fingertips, pushing the dough up the side of the plate as much as you can. (After a few minutes, it will start to shrink back, so keep pushing it together and up the sides of the plate before you add the filling.)
  • 2. Fry diced bacon until cooked to your liking. (Or cook bulk sausage in loose pieces.) Drain most of the drippings off. Arrange meat in the bottom of the pie dish with your cooked hash browns (if you decide to use them) Break your eggs into a mixing bowl and whip until thoroughly blended. Pour this over the meat mixture in the pie dish. Remember the canned biscuits will rise a little, so be sure and do not over-fill the pie.
  • 3. Top evenly with shredded cheese. Place in preheated oven and bake uncovered 30 to 40 minutes... The edges of the biscuits should be browned. Using a toothpick, test for doneness. Remove from oven and cool about 10 minutes before slicing. Serve hot, or cool completely, slice and place slices in freezer bags. You can pull one out of the freezer at a time, and microwave it for your convenience as desired. (I recommend serving this with a delicious salsa of your choosing. I use ("La Costena" brand) green tomatillo salsa that isn't too spicy. This lends it a wonderful and savory Tex-Mex flavor!)
  • 4. As a side note... Feel free to add other ingredients, like carmelized onions with chunks of sweet bell peppers or spicy jalapenos, chorizo, etc.. You can also sprinkle some slices of black olive on top... Use your appetite and imagination to make this suit your own taste. Buen Probecho, Y'all!! Enjoy!
