1 sweet onion, chopped

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Spray a casserole dish or 9x13-inch pan with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer sausage to a bowl. Saute onion in the same skillet until translucent, about 5 minutes. Transfer onion to the bowl with the cooked sausage.

1 teaspoon butter
1 teaspoon seasoning salt
1 teaspoon black pepper
12 eggs, lightly beaten
8 ounces shredded mild cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a medium baking dish.
  • Cook and stir sausage in a medium skillet over medium heat until evenly browned and broken up.

  • Lightly spray a 9 x 13 baking dish with cooking spray.

½ cup coconut milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with 1 tablespoon coconut oil.

I threw this together last night to cook for breakfast this morning using just what I had on hand and it turned out beautifully. This is very adaptable to your individual taste. You can leave out the bacon bits, or substitute cooked sausage or ham. Next time I will definitely add mushrooms and green peppers! This is wonderful served with fresh tomato slices and/or other fruit.

6 eggs
1 (12 ounce) can evaporated milk
1 (17 1/3 ounce) can Pillsbury Grands refrigerated buttermilk biscuits
1 (20 ounce) bag simply potatoes refrigerated shredded hash brown potatoes
2 cups shredded cheddar cheese, divided
1/4 cup hormel real bacon bits
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon Mrs. Dash seasoning mix
1 tablespoon instant minced onion

Steps:

  • Spread the shredded potatoes evenly in a greased 9x13 casserole dish.
  • In a mixing bowl whisk together the eggs, milk, spices, onion, and bacon bits.
  • Add 1 cup of the shredded cheese and mix lightly.
  • Cut the biscuits into quarters with kitchen shears, and drop them into the mixture, ensuring all pieces are coated.
  • Once all the biscuits are in the egg mixture, use a slotted spoon to remove the biscuit pieces and arrange them in a single layer over the potatoes.
  • Pour the egg mixture evenly over all.
  • Top with the remaining 1 c of shredded cheese.
  • At this point, you can cover with foil and refrigerate overnight, or you can put it right into the oven.

1 yellow onion, chopped, sauteed in sausage grease
7 eggs
1/2 c milk (i used 2%)
20oz bag(s) frozen ore-ida diced hash browns
8 oz brick of mild cheddar cheese, grated
salt & pepper, to taste

Steps:

  • 1. Preheat oven to 350. Spray medium casserole dish (we used 9 x 13) with non-stick spray. Set aside. Prepare sausage and onions.In a large mixing bowl,combine all ingredients including sausage and onions. Pour into prepared casserole dish.

1 pound ground sausage
½ large onion, chopped

¾ cup heavy whipping cream
1 teaspoon ground black pepper, or to taste
2 cups shredded sharp Cheddar cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Arrange Tater Tots® in a single layer on a baking sheet.
  • Bake in the preheated oven until potato nuggets are partially cooked, 12 to 15 minutes. Remove from oven.

4 c golden potatoes, sliced into 1/4 inch slices
1 Tbsp olive oil, extra virgin
2 oz pancetta, chopped or bacon
3 c vidalia onions, sliced
butter
6 large eggs, lightly beaten
1/4 c milk
1 c gruyere or swiss cheese, shredded
1 tsp kosher salt
1 tsp rosemary sprigs, snipped
1/2 tsp freshly ground black pepper

Steps:

  • 1. In a large saucepan cook potatoes, covered in boiling salted water about 5 minutes or until slightly tender but still firm. Drain and set aside.
  • 2. In a large skillet heat olive oil over medium-high heat. Add pancetta; cook until lightly browned. Using a slotted spoon, remove pancetta, reserving drippings in skillet. Set pancetta aside.
  • 3. Add onions to skillet. Cook and stir over medium-low heat about 20 minutes or until lightly browned and very tender. Remove from heat. Carefully stir potatoes and pancetta into onions in skillet.
  • 4. Lightly butter a 2 quart rectangular baking dish. Spread potato mix into prepared dish. In a medium bowl whisk together eggs and milk. Add cheese, salt, pepper and rosemary; stir until well mixed. Pour evenly over potatoes in baking dish.
  • 5. Cover and chill for at least 4 hours or up to 24 hours.
  • 6. Preheat oven to 350-degrees. Bake uncovered for 45-50 minutes or until golden and a knife inserted into the center comes out clean. Let stand 15 minutes before serving.
  • 7. This casserole may be made and served the same day by omitting the chilling step.
