6 ounces andouille sausage, sliced 1/4-inch thick

  • For the Creole sauce: Whisk together the mayonnaise, mustard, Cajun seasoning, paprika, pickle, hot sauce, Worcestershire sauce, garlic and chives in a small bowl until combined. Cover and refrigerate until the skillet is done.
  • For the skillet: Preheat the broiler. Toss the shrimp with the House Seasoning in a small bowl and set aside.

Steps:

  • Heat skillet on medium heat with the olive oil.

  • Bring a large pot of water to a boil. Add potatoes, and cook until tender but still firm, 12 to 15 minutes; drain.

2 cups refrigerator hash brown potatoes
1/2 medium onion, chopped

  • I snip the bacon into 1 inch pieces and fry up in a 12 inch deep skillet.

4 -5 medium potatoes, peeled and grated
1/4 lb breakfast sausage
2 eggs
1/4 cup diced onion
7 cherry tomatoes, sliced
1/8 cup mozzarella cheese, shredded
1/2 teaspoon hot sauce (optional)
salt

Steps:

  • In a large skillet add the sausage and cook until most of it is brown.
  • Drain and return to pan.
  • Add the grated potatoes, onion, and salt to the skillet.
  • Cook on medium heat until the hashbrowns are golden brown.
  • Push the mixture to one side of the pan and scramble the eggs in the empty space.
  • Once cooked, stir them into the hashbrowns.
  • Add the hot sauce, tomatoes, and cheese.
  • Stir well and serve immediately.

1/2 lb pork sausage
2 cups frozen hash brown potatoes
1 (10 ounce) can diced tomatoes with mild green chilies, drained
1/2 lb Velveeta cheese, product cut up
6 eggs, beaten
2 tablespoons milk or 2 tablespoons water
salt & pepper

Steps:

  • Brown sausage in large nonstick skillet on medium heat.
  • Drain.
  • Add potatoes and tomatoes, cook 5 minutes or until the potatoes are browned.
  • Top with Velveeta.
  • Mix eggs and milk; pour evenly over ingredients in skillet; cover.
  • Reduce heat to Low.
  • Cook 10 to 12 minutes or until eggs are set and cheese is melted.
  • Let stand, uncovered, 5 minutes before cutting into wedges to serve.
  • Serve with salsa if desired.

3 scallions, chopped
1 1/2 cups cooked brown rice
1/3 cup ham, pre-cooked and chopped
1 garlic clove, minced
red pepper flakes, to taste
creole seasoning, to taste
2 tablespoons celery, finely chopped
3 tablespoons green bell peppers, finely chopped
4 large eggs
1/2-1 ounce water
1 dash salt
1 dash black pepper

Steps:

  • Take a 9" heavy bottomed iron skillet or (less preferable) non-stick skillet and spray with cooking spray. Heat on medium flame.
  • Chop 3 medium scallions and mince one garlic clove, then add to skillet. Reduce flame to medium low.
  • Chop celery and green bell pepper together, and add to skillet. toss or stir vegetables around, so they do not burn.
  • Then chop the ham and add to skillet. Allow to cook for one minute. Add the cooked rice to skillet and stir all ingredients.
  • Add Creole seasoning and red pepper flakes according to taste.
  • Allow to cook for two-three minutes, or until rice is heated through. While cooking, crack 4 large eggs in a bowl and whisk with water, salt, and pepper. Add egg mixture to rice and stir.
  • Keep stirring to either a soft or hard scramble, according to taste.

3 tablespoons olive oil
1/2 pound ground chuck
1/2 pound fresh chorizo
Salt and freshly ground black pepper

2 medium red potatoes, diced small
1/2 large Vidalia onion, chopped
1 clove garlic, minced
1 teaspoon chopped fresh rosemary leaves
1/2 teaspoon crushed red pepper flakes
4 eggs
1/4 cup chopped parsley leaves

Steps:

  • Heat 1 tablespoon oil in a skillet to medium heat, add ground chuck and chorizo, cook until brown, breaking it up as it cooks. Season with salt and pepper, to taste. Add potatoes, onion and 1 more tablespoon oil, if needed. Stir to incorporate, then let cook 8 minutes, undisturbed to form golden crust. Stir potatoes, then let cook undisturbed another 8 minutes. When potatoes are almost totally cooked through, mix in garlic, rosemary, and red pepper. Form 4 pockets in the hash to put the eggs. Add a little more oil in the pockets, if necessary, so the eggs don't stick. Carefully pour an egg into each pocket, cover pan and turn heat to low. Cook until eggs are set to desired doneness, about 2 minutes. Remove to a serving platter or place on individual plates and garnish with parsley.

1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
2 tablespoons oil, divided
1 1/2 teaspoons roasted garlic
1/2 cup red bell pepper, finely diced
1/2 cup onion, finely diced
6 sun-dried tomatoes, finely chopped
6 eggs, lightly beaten
1 tablespoon fresh oregano, chopped
1 tablespoon fresh basil, chopped
salt and pepper, to taste
sour cream (optional for serving)
salsa (optional for serving)

Steps:

  • In large (12-inch) skillet, over medium heat, fry chopped bacon just until crisp. Remove bacon to paper towels and set aside. Drain all but 1 Tablespoon of the grease.
  • Add one Tablespoon of the oil to the skillet, heat over medium heat, and then add the Simply Potatoes Shredded Hashbrowns. Spread the potatoes in an even layer, over the bottom of the pan, and use a spatula to lightly press down.
  • Cook 6-7 minutes, or until golden brown on the bottom.
  • Drizzle the top of the potatoes with the remaining 1 Tablespoon of oil and use the spatula to turn over the potatoes in about 6 sections. Cook for an additional 6 minutes, or until the potatoes have turned golden brown on the bottom.
  • Gently stir the potatoes and add the roasted garlic, red bell pepper, onion and sun-dried tomatoes to the pan. Cook and stir until the peppers and onions are softened and the potatoes have reached 165° for 2 minutes.
  • Pour the beaten eggs over the potato mixture, sprinkle with the oregano, basil, salt and pepper, and then stir gently to combine.
  • Allow to cook without stirring for 2-3 minutes.
  • Use spatula to section and gently turn over mixture. Continue to cook until the egg is no longer wet and has cooked through, about 2-3 minutes.
  • Serve alone or with sour cream and salsa.

½ cup shredded Cheddar cheese
½ cup milk
8 links breakfast sausage, or to taste

1 teaspoon ground cayenne pepper

Steps:
