Steps:

Steps:
- Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Combine the flour, sugar, baking soda and salt in the bowl of an electric mixer fitted with a paddle attachment. Add the butter and mix on low speed until the butter is mixed into the flour.
- With a fork, lightly beat the buttermilk, egg and orange zest together in a measuring cup. With the mixer on low speed, slowly add the buttermilk mixture to the flour mixture. Combine the currants with 1 tablespoon of flour and mix into the dough. It will be very wet.
- Dump the dough onto a well-floured board and knead it a few times into a round loaf. Place the loaf on the prepared sheet pan and lightly cut an X into the top of the bread with a serrated knife. Bake for 45 to 55 minutes, or until a cake tester comes out clean. When you tap the loaf, it will have a hollow sound.
- Cool on a baking rack. Serve warm or at room temperature.
Tips:
- Utilize buttermilk for a tender and flavorful bread: Buttermilk reacts with the baking soda, creating a light and fluffy texture. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
- Don't overwork the dough: Overworking the dough will result in a tough bread. Mix the ingredients just until they come together, and then shape the dough into a round loaf.
- Score the top of the dough before baking: This will help the bread rise evenly and prevent it from cracking.
- Bake the bread at a high temperature initially: This will help to create a crispy crust. Then, reduce the temperature to finish baking the bread through.
- Let the bread cool completely before slicing: This will help to prevent the bread from crumbling.
Conclusion:
With its simple ingredients and easy preparation, Brennan's Irish Soda Bread is a delicious and versatile bread that can be enjoyed on any occasion. Whether you're serving it for breakfast, lunch, or dinner, this bread is sure to be a hit. So next time you're looking for a quick and easy bread recipe, give Brennan's Irish Soda Bread a try.
