5 medium baking potatoes
1/4 cup butter, softened
2 cups shredded cheddar cheese, divided
3/4 cup sour cream
1 envelope ranch salad dressing mix
1 tablespoon minced chives
1 garlic clove, minced
Crumbled cooked bacon and chopped green onion

Steps:

  • Scrub and pierce potatoes. Bake at 375° for 1 hour or until tender. When cool enough to handle, cut a thin slice off the top of each potato and discard. Cut each potato in half lengthwise. Scoop out the pulp, leaving thin shells. , In a large bowl, beat the pulp with butter. Stir in 1 cup of cheese, sour cream, salad dressing mix, chives and garlic. Spoon into potato shells. 2 large idaho potatoes
4 slices bacon, quartered
1/2 cup green onion, chopped
2 tablespoons parmesan cheese, grated
1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon white pepper, freshly ground

Steps:

  • Scrub potatoes and bake 1 hour at 400ºF.
  • Grill bacon pieces until crisp. Drain off bacon fat except 3 tablespoons. Add green onions and sauté slowly.

2 large russet potatoes, skin washed and patted dry
2 tablespoons vegetable oil
Kosher salt and freshly ground black pepper
3/4 cup whole-fat plain Greek yogurt
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh parsley
2 scallions, finely chopped (white and green parts)
Kosher salt and freshly ground black pepper

1/2 cup heavy cream or milk
1 1/2 cups shredded Italian cheese blend

Steps:

  • For the potatoes: Preheat the oven to 400 degrees F. Rub the potatoes all over with the oil. Season the skins with salt and pepper and place on a baking sheet. Bake until tender inside, about 1 hour. Set aside until cool enough to handle, but still warm. Leave the oven on.
