This is another recipe from Eating for IBS by Heather Van Vorous. It's posted in response to a request for low-fat carrot cakes. I haven't tried it myself, but have heard rave reviews about it from others. The sweet orange icing looks like a great touch, although I'm sure it would be great without it or with your own choice of icings, too.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
3/4 cup granulated sugar
1/4 cup packed brown sugar
3/4 cup egg whites or 3/4 cup egg substitute
1/2 cup canola oil
2 tablespoons fresh orange zest
1 teaspoon vanilla
1 1/2-2 cups carrots, packed finely shredded or grated
3/4 cup canned crushed pineapple, with liquid
3/4 cup sifted confectioners' sugar
1 1/2 teaspoons fresh orange zest
1 tablespoon fresh orange juice
1/2 teaspoon fresh lemon juice

Steps:

  • Preheat oven to 350 F.
  • Spray a 10-inch non-stick bundt pan with cooking oil and set aside.
  • Sift the first 7 ingredients (flour to granulated sugar) into a large bowl and stir well to combine.
  • In a separate large bowl, beat next 7 ingredients (brown sugar to pineapple) with an electric mixer until well combined.
  • Add the wet ingredients to the dry with just a few swift strokes by hand; do not over-beat or the cake will be tough.
  • Pour batter into prepared pan and bake for 45-55 minutes, until toothpick or cake tester inserted into center comes out clean.
  • Cool on rack (in pan) for 10 minutes, then invert onto rack and cool to room temperature.
  • Top with Sweet Orange Icing (or another icing of your choice).
  • To make Sweet Orange Icing: Combine all icing ingredients and blend with a fork until smooth.
  • Use immediately to top cake (if icing sits it will harden).

1 1/2 cups sugar
1 1/4 cups canola oil
2/3 cup brown sugar, firmly packed
2 teaspoons pure vanilla extract
1 large orange, zest of, finely grated
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 1/4 cups walnuts or 1 1/4 cups shredded coconut
1 cup raisins or 1 cup dried cherries, chopped
12 ounces cream cheese, softened
4 ounces unsalted butter, softened
2 teaspoons pure vanilla extract
1/4 teaspoon lemon extract (optional)
2 teaspoons lemon zest
2 teaspoons orange zest
2 1/2 cups confectioners' sugar

Steps:

  • Prepare muffin tins with papers (about 48 regular cupcakes) or two 9-inch round cake pans (2 inch sides) with parchment and oil.
  • Preheat oven to 350 degrees F.
  • Coarsely grate the carrots in a food processor using the grater attachment.
  • Chop them into finer pieces with the medal blade attachment in the food processor, if you want the texture of the cake a little bit finer.
  • Mix together the eggs, sugar, oil, brown sugar, vanilla extract and orange zest.
  • Mix together all of the dry ingredients in a bowl with a whisk.
  • Add the dry ingredients to the egg mixture.
  • Add the finely chopped carrots, walnuts (or coconut), and raisins (or dried cherries).
  • Pour the batter into the prepared pans or scoop into cupcake papers (fill 3/4 full).
  • Bake cupcakes for about 18-25 minutes, or until tester comes out clean.
  • Bake 9-inch cakes for about 35-40 minutes, or until tester comes out clean.
  • Cool in pan(s) on wire rack for 10-15 minutes.
  • Make frosting by combining all frosting ingredients and beating well, until fluffy.
  • NOTE: If you like lots of frosting, double this recipe, but you'll have some left over, even if you are generous with it while frosting the cake. But it's delicious on EVERYTHING!
  • To assemble the cake, remove from pan(s) and peel off the parchment paper from the bottom, place on cardboard rounds.
  • With a thin serrated knife slice off the very top of the cake layer, using a sawing motion, to level the tops, if desired.
  • Cut the cake layers into 2 equal layers. Slide the layers onto a cardboard round or any other flat surface.
  • Using an offset spatula spread about 1½ cups of the frosting evenly over the surface of the first layer.
  • Top with the next layer and repeat for the rest of the layers.
  • Place about 2 cups of the icing on the top of the cake and spread evenly.
  • Spread the icing onto the sides of the cake.
  • Using the spatula, create swirls in the frosting on the cake. This cream cheese frosting is very soft so you won't want to try for anything too exacting.
  • Press additional shredded coconut onto the sides of this cake, as a garnish, if desired.

3 (4 ounce) jars carrot baby food
½ cup grated carrot
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt pan.
  • Sift together the flour, baking soda, cinnamon and salt. Set aside.

6 cups unbleached all-purpose flour, plus more for dusting
2 pounds carrots, finely grated
6 large eggs, room temperature
2/3 cup nonfat buttermilk
4 cups sugar
3 cups vegetable oil
2 vanilla beans, halved lengthwise, seeds scraped and reserved
1 cup golden raisins
4 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons kosher salt
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/4 teaspoon ground cloves
Cream-Cheese Frosting for Bunny Carrot Cake
10 cups mini marshmallows
2 chocolate-covered espresso beans
1 pink jelly bean

Steps:

  • Preheat oven to 325 degrees. Coat an ovenproof 13-inch-diameter 6-quart bowl with cooking spray. Dust with flour, and tap out excess. Set aside.
  • Whisk together carrots, eggs, buttermilk, sugar, oil, vanilla seeds, and raisins in a large bowl. Whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves in a medium bowl. Stir flour mixture into carrot mixture. Transfer batter to prepared bowl.
  • Bake until a tester comes out clean, about 2 1/2 hours. Transfer to a wire rack; let cool in bowl 40 minutes. Unmold onto rack. Let cool completely.
  • Place cake, broad side down, on a cutting board. Using a serrated knife, trim 2 sides to create a slightly pointed head and body. Using 2 scraps from sides, cut out two 5-inch-long ears. (Trim bases of ears at an angle so that they will lean toward tail.) Attach with frosting. From 1 scrap, carve a ballshaped tail that has 1 flat side; attach with frosting. Refrigerate cake 20 minutes. Spread a thick layer of frosting over cake.
  • Cover entire cake (except for insides of ears and the tail) with marshmallows. Press in espresso beans for eyes and the jelly bean for a nose. Add 8 pieces of licorice for whiskers. Just before serving, cover ears and tail with cotton candy.

1 can (16 ounces) vanilla frosting
1-3/4 cups sweetened shredded coconut, divided
2 drops red food coloring

  • Mix and bake cake according to package directions, using two greased and floured 9-in. pans. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For bunny's head, place one cake on a 20x14-in. covered board. Cut remaining cake into two ears and one bow tie (see Fig. 1). Place ears 4-in. apart on top of head. Divide remaining coconut between two resealable plastic bags; add red food coloring to one bag and green to the other. Seal bags and shake to coat. Place pink coconut on ears to within 1/2 in of the edges. Place green coconut around the cake. , Use jelly beans for eyes, nose and to decorate bow tie. Cut the licorice into seven 2-in. pieces and seven 3/4-in. pieces. Place six 2-in. pieces next to nose for whiskers. Bend the remaining 2-in. piece into a semicircle and place 3/4 in. below nose for mouth. Connect nose to mouth with one 3/4-in. pieces. Place three 3/4-in. pieces above each eye for eyelashes.
