- Heat oil in a large nonstick skillet over medium-high heat.
- Add onion, potato, and bell pepper; saute 4 minutes or until tender.
- Stir in tomatoes; saute 2 minutes, stir in 1/2 teaspoons salt.
- Combine onion mixture and bread.
- Place half of bread mixture into a 13x9-inch baking dish coated with cooking spray. Sprinkle with half of Brie.
- Top with remaining bread mixture and remaining Brie.
- Put egg substitue and eggs in a medium bowl.
- Add remaining 1/2 teaspoons salt, herbes de Provence, and pepper.
- Add milk, stirring with a whisk until well blended.

- Spread butter onto one side of each slice of bread. Cut into quarters. Lay half of the bread, butter side down, in the bottom of a 9x13 inch baking dish. Top with half of the Cheddar cheese and half of the Monterey Jack. Layer the remaining bread over the cheese, and top with the other halves of the cheeses.
- In a large bowl, whisk together the eggs, half-and-half, and milk. Stir in the brown sugar, salt, pepper, cayenne, onion powder, mustard powder, and Worcestershire sauce. Pour over the cheese and bread. Cover, and refrigerate at least 6 hours, preferably overnight.

- Place half of the bread cubes in the dish, then grated Fontina, then chopped basil, then crab meat; top with remaining bread cubes.
- Take the chilled Brie from the refrigerator and trim the rind (note: the colder the Brie remains, the easier it will be to cut, so don't take it out of the refrigerator too soon before this step).
