This is a recipe from another web site and something DH grew to love when he lived in the Midlands of England. I usually substitute Fruit Bits by Sunmaid for the raisins and just use 1 cup of them.

Tips:

  • Use stale bread: Stale bread absorbs more custard, resulting in a richer, denser pudding.
  • Trim the crusts: Removing the crusts creates a smoother texture and prevents the pudding from becoming too chewy.
  • Use a variety of breads: Combine different types of bread, such as white, whole wheat, and sourdough, to add flavor and texture to the pudding.
  • Soak the bread in milk or cream: Soaking the bread in milk or cream helps to soften it and makes it more absorbent.
  • Add spices and flavorings: Enhance the flavor of the pudding by adding spices like cinnamon, nutmeg, or ginger, or extracts like vanilla or almond.
  • Use fresh or dried fruits: Incorporate fruits like raisins, cranberries, or apples for a sweet and tangy twist.
  • Bake the pudding in a water bath: Baking the pudding in a water bath creates a moist and evenly cooked pudding.
  • Let the pudding cool before serving: Allow the pudding to cool slightly before serving to allow the flavors to meld and the texture to set.
