Categories     Cauliflower

Time 17m

Yield 16 serving(s)

Number Of Ingredients 7

1 medium head cauliflower, cut into florets and blanched
1 medium broccoli, cut into florets and blanched
1 medium vidalia onion, chopped
1 cup grated old cheddar cheese (or try feta?)
1/2 cup bacon bits (or veggie bacon bits)
1 cup Miracle Whip (try using reduced fat)
1 teaspoon Dijon mustard

Steps:

  • Toss veggies, cheese and bacon bits in bowl.
  • Mix dressing and mustard.
  • Pour over salad and toss to coat.
  • Refrigerate until ready to serve.
  • *To blanch veggies, plunge into boiling water briefly (2 minutes), then into cold water to stop the cooking process.).

Tips:

  • Florets First: For the best results, use fresh broccoli and cauliflower florets. Pre-cut florets from the store may contain unwanted stems and leaves.
  • Blanch & Chill: Blanching the vegetables in salted water helps retain their vibrant color and crisp texture while also removing any impurities. Remember to transfer them to an ice bath immediately after blanching to stop the cooking process.
  • Blue Cheese Dressing: Make sure the blue cheese dressing is well combined and creamy. If it's too thick, add a little milk or yogurt to thin it out. Alternatively, if it's too thin, add more crumbled blue cheese or mayonnaise.
  • Add-Ins and Substitutions: Feel free to customize the salad to your liking. Try adding chopped celery, shredded carrots, or crumbled bacon. You can also substitute the blue cheese dressing with ranch or Caesar dressing if preferred.
  • Fresh Herbs: For an extra layer of flavor, sprinkle some freshly chopped herbs like chives, parsley, or dill over the salad before serving.

Conclusion:

Broccoli Cauliflower Blue Cheese Salad is a delightful and nutritious dish that combines the goodness of fresh vegetables with a creamy, tangy dressing. It's perfect for potlucks, picnics, or as a healthy side dish. With its vibrant colors and delightful flavors, this salad is sure to be a crowd-pleaser.
