1-3/4 cups half-and-half
1 tablespoon butter
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
4-1/2 teaspoons cornstarch
4 ounces cream cheese, softened
1 bunch broccoli, cut into florets (about 4-1/2 cups)
1 cup shredded cheddar cheese
TOPPING:
1/2 cup crushed Ritz crackers
2 tablespoons shredded Parmesan cheese
2 tablespoons butter, melted
1 cup chicken broth or water

Steps:

  • Place wire rack with handles and chicken broth into inner pot. Add broccoli to mesh basket; place on rack. Cover with glass lid. Press steam function; select vegetables setting. Press timer; set to 7 minutes. Start. , Drain and set broccoli aside. In a small bowl, whisk cornstarch, garlic powder, salt and pepper. Gradually whisk in half-and-half until smooth; add to inner pot. Press saute function; select vegetables setting. Set to medium cook time (10 minutes). Bring to a gentle boil, stirring constantly. My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
¼ cup onions, chopped
3 (10 ounce) packages frozen chopped broccoli
8 ounces shredded sharp Cheddar cheese
salt and pepper to taste
1 dash paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
  • In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
  • Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
  • Bake for 45 minutes to 1 hour.

3 pounds broccoli, cut into florets, stems discarded or saved for another use
Kosher salt and freshly ground black pepper
Cheddar Cheese Sauce, recipe follows
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Kosher salt and freshly ground black pepper
1 cup grated sharp Cheddar

Steps:

  • Fill a medium saucepan with 1 inch of water and place a steamer inside. Bring the water to a boil, place the broccoli in the steamer, reduce the heat to medium, cover and steam until tender and bright green, about 5 minutes.
  • Transfer the broccoli to a bowl and sprinkle lightly with salt and pepper. Top the broccoli with the Cheddar Cheese Sauce, or serve it on the side.

2 1/2 cups shredded sharp cheddar (8 ounces)
4 teaspoons Dijon mustard
1/2 cup Greek yogurt, plus more for serving
1/2 cup sliced scallions (from about 4), plus more for serving
4 cups broccoli florets, cut into bite-size pieces
5 large eggs, lightly beaten
8 ounces bacon (about 8 slices)
2 tablespoons unsalted butter

  • In a medium pot, bring potatoes to a boil in salted water; cook 10 minutes. Drain; let cool completely. Combine cheese, Dijon, yogurt, and scallions in a large bowl.
