1 tablespoon butter
1 skinless, boneless chicken breast, cut into bite-sized chunks
1 (8 ounce) container ricotta cheese
1 tablespoon butter
1 teaspoon garlic powder
1 teaspoon dried oregano
salt and ground black pepper to taste
1 (12 inch) pre-baked pizza crust
2 cups shredded mozzarella cheese
½ cup chopped fresh broccoli
1 (3 ounce) can sliced mushrooms, drained

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).

1 pizza dough, unbaked
1/2 lb ground chicken
3 cups broccoli florets, steamed
2 ounces goat cheese
1 cup mozzarella cheese (approx.)
2 cloves garlic
salt (to taste)
pepper (to taste)
dried thyme (to taste)
olive oil

Steps:

  • Saute ground chicken with a little olive oil, salt, pepper, and thyme until cooked.
  • Press the two cloves of garlic and combine with some olive oil (about 1 Tb) and brush over the pizza crust.
  • Top the pizza with the chicken, broccoli, and cheeses.

One 16-ounce bag frozen broccoli tots, defrosted
1/3 cup grated Parmesan
1/2 cup ricotta cheese
1 cup shredded rotisserie chicken
1 cup frozen broccoli florets, defrosted and chopped
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 425 degrees F. Line the bottom of a baking sheet with parchment and brush with olive oil.
  • In a medium bowl, add the broccoli tots and Parmesan. Break up the tots with your hands or a wooden spoon and mix until combined. Transfer the tot mixture to the prepared baking sheet and use your hands to form the mixture into a circle, making sure it isn't too thick. Bake the crust until golden brown, about 25 minutes. Let cool slightly.
  • Spread the ricotta on the crust and top with the chicken and broccoli. Top with the mozzarella and return to oven until the cheese is completely melted, about 10 more minutes. Let cool for about 5 minutes before serving.

PIZZA CRUST
1 c white whole wheat flour
1 c unbleached bread flour
1 tsp kosher salt
1 tsp sugar
1 2/2 tsp vital wheat gluten
2 tsp instant yeast
1 Tbsp olive oil, extra virgin
3/4 c water, warm (90-110-degrees)
WHITE SAUCE
1 Tbsp olive oil, extra virgin
pinch red pepper flakes
1/4 tsp onion powder
1/4 tsp garlic powder
1/4 tsp freshly ground black pepper
1/4 tsp kosher salt
1 c milk
1 Tbsp all purpose flour
1/4 c mozzarella cheese, freshly shredded
2 Tbsp parmigiano-reggiano, grated
TOPPINGS
1 Tbsp olive oil, extra virgin
2 c mushrooms, fresh, sliced
3 c broccoli florets
kosher salt and freshly ground black pepper to taste
1 clove garlic, minced
1 1/2 c chicken, cooked and shredded
1 c mozzarella cheese, freshly shredded

Steps:

  • 1. In the bowl of your stand mixer, combine the flours, salt, sugar, wheat gluten and instant yeast. Whisk together. Add the olive oil and the water. Using dough hook, mix and knead dough for 8-10 minutes, adding more water or flour as needed, until dough is smooth and elastic. Spray a large bowl with cooking spray and transfer dough to bowl, rolling it around to completely coat with oil. Cover bowl with plastic wrap and let proof at room temperature until doubled, about one hour. Gently punch dough down to degas, knead again for a few minutes and return to bowl. Cover bowl again with plastic wrap and refrigerate overnight. The next day, remove dough from fridge about an hour and a half before you want to bake the pizza. Spray some cooking spray on your counter top and transfer dough. Cover dough with plastic wrap that has been sprayed with cooking spray. Let rest while you make your sauce and put the rest of your pizza ingredients together.
  • 2. In a saute pan heat olive oil over medium heat. Add crushed red pepper flakes, onion powder, garlic powder, salt, pepper and flour. Cook and stir for 2-3 minutes than whisk in milk. Reduce heat and whisk and stir until sauce is smooth and has started to thicken. Remove pan from heat and whisk in the Parmigiano-Reggiano and mozzarella cheeses. Set aside. In a skillet heat olive oil over medium heat. Add mushrooms and saute until they've given up most of their liquid, 5-6 minutes. Add the broccoli florets and season with salt and pepper. Saute for another minute or two then add minced garlic and saute for one more minute. Remove from heat and add chicken. Stir well to combine.
  • 3. Place pizza stone in oven and preheat oven to 475-degrees. Spray parchment paper with cooking spray and lightly dust with cornmeal (optional.) Place dough on prepared parchment paper and flatten. Working from the middle to the outside, press and stretch the pizza dough into a 12-14 inch round. If it resists, just let it rest for 5-10 minutes and then work with it again. Transfer pizza crust and parchment paper to pizza stone. Bake for 5 minutes then remove crust from oven, leaving stone in oven. Spread white sauce evenly across crust, then top with the chicken, mushroom and broccoli mixture. Sprinkle mozzarella cheese over all. Return crust to oven. You should be able to do this without the parchment paper at this point. Bake for an additional 8-10 minutes, or until crust is evenly browned and cheese is bubbly.

This was inspired by a broccoli cheese stuffed potato recipe I found, but it seemed to be a little labor intensive, so I decided it would work better as pizza. This is an original "sbera007" creation! We were serving 6 so we let our dough rise so it would spread into a jelly roll pan. If using a store bought dough, I would double the dough. Feel free to half the topping for 4 people and use a single store bought dough. Halving the recipe will alter the cooking time a little bit. (NOTE: I included the time for the dough to rise in the recipe time. This will be different if you use a different pizza crust).

1 pizza crust (I use No-Knead Food Processor Thin Crust Pizza Dough)
2 cups broccoli (steamed and chopped)
1/2 lb boneless chicken breast
1 tablespoon olive oil
oregano (to taste)
basil (to taste)
15 ounces part-skim ricotta cheese
1 cup mozzarella cheese (divided)
1 cup cheddar cheese (divided)
1 teaspoon dry mustard
1 teaspoon crushed red pepper flakes (more if you like it hot, less if you don't)

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Prepare dough.
  • While dough is rising or sitting, steam broccoli and cook chicken with olive oil, oregano and basil to taste, until no longer pink.
  • Spread the dough into a prepared jelly roll pan.
  • Bake for about ten minutes.
  • Meanwhile, chop cooled chicken into small chunks and chop steamed broccoli.
  • Combine chicken, Ricotta cheese, broccoli, 1/2 cup Mozzarella cheese, 1/2 cup Cheddar cheese, dry mustard, and crushed red pepper.
  • Remove crust from oven.
  • Spread with ricotta mixture.
  • Top with remaining cheese.
  • Cook until cheese is browned (10 to 15 minutes).

My teenage sons favorite pizza! I make this for him and his friends every weekend along with a meat lovers with bacon. This is always the first to go! It's so easy too, since I buy the dough and a precooked small chicken at the deli, and the alfredo sauce is just from a jar.

2 bag(s) pizza dough ( i use whole wheat)
1 lb mozzarella cheese
3 - 4 c left over chicken
1 -2 bunch broccoli
1 jar(s) alfredo sauce
shredded parmesan cheese
2 Tbsp melted butter
1` tsp garlic powder
flour

Steps:

  • 1. place broccoli in a pot of boiling water to cook till tender. (10-15 min. ) preheat oven to 425 degrees.
  • 2. while broccoli is cooking, flour your surface and roll out the dough one at a time to fit your pans. I use 2 medium cookie sheets since they fit side by side in the oven. stretch the dough over the pans to over hang.
  • 3. Let the dough rest while you shred the mozzarella cheese. Divide the cheese in half.
  • 4. roll the over hanging dough to make the crust. pour some alfredo sauce on the dough and spread with a spoon.
  • 5. sprinkle mozzarella on top of alfredo sauce.
  • 6. add the toppings: drain broccoli. arrange florets across pizza. cut or tear pieces of chicken and arrange across pizza. ( I have used left over chicken cutlets as well as baked chicken. I have even purchased an already cooked small chicken at the deli when I buy the pizza dough.
  • 7. combine the melted butter with the garlic powder. use a brush to speed the mix on the crust. This makes a garlic bread stick crust.
  • 8. sprinkle the toppings with a handful or two of parmesean cheese.
  • 9. bake in 425 degree oven till the cheese bubbles and has spots of golden brown. Approx. 15 min. may be more. when done slide out of pan onto table and cut into 8 pieces each pizza. enjoy

  • 1. Heat oven to 350. Lightly spray a pizza pan w/ olive oil cooking spray. Sprinkle pan w/ garlic powder.
