BROCCOLI, CHICKPEA, AND CHERRY TOMATO SALAD

Broccoli, Chickpea, and Cherry Tomato Salad image

This easy recipe came from the March 2004 issue of Everyday Food. It is quick to put together and a colorful and delicious salad. I prefer to eat it right away, still slightly warm. I think it would be good sprinkled with crumbled feta cheese or with some chicken or tuna for a main course salad.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 9

1 lb broccoli, florets only, steamed until crisp tender
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 small red onion, minced
coarse salt
pepper
1 pint cherry tomatoes, halved (I use the small grape or berry tomatoes)
1 (15 ounce) can chickpeas, drained and rinsed

Steps:

  • In large bowl, whisk Dijon mustard with red wine vinegar and olive oil.
  • Stir in red onion and season with salt and pepper.
  • Add cherry tomatoes, chickpeas and broccoli; toss to coat.
  • Serve immediately, room temperature or chilled.

Tips:

  • Choose fresh, colorful vegetables. The fresher the vegetables, the better the salad will taste. Look for broccoli with tight florets, cherry tomatoes that are plump and red, and chickpeas that are firm and not wrinkled.
  • Don't overcook the broccoli. Broccoli should be cooked until it is tender-crisp, but not mushy. Overcooked broccoli will lose its flavor and nutrients.
  • Use a flavorful dressing. The dressing is what will bring all the flavors of the salad together. Use a dressing that is light and tangy, such as a vinaigrette or a lemon-tahini dressing.
  • Add some crunch. To add some extra crunch to the salad, you can add some chopped nuts, seeds, or croutons.
  • Serve immediately. Broccoli chickpea and cherry tomato salad is best served immediately after it is made. The vegetables will start to wilt if they sit for too long.

Conclusion:

Broccoli chickpea and cherry tomato salad is a healthy and delicious salad that is perfect for a light lunch or dinner. It is packed with nutrients, and it is a great way to get your daily dose of vegetables. With its colorful appearance and flavorful dressing, this salad is sure to be a hit with everyone who tries it!
