BROCCOLI CORNBREAD CASSEROLE

I was cooking for a vegetarian for a while, and came up with a few recipes that were very much enjoyed. This is one of them. I adapted this recipe from one I found in an old Church cookbook called Blessings. It's one of my favorites, great for lunch or dinner with a salad. It also makes a great bring along recipe, and halves easily too.

This is a favorite when my girlfriends come over for a "hen party". We like it "as is", but it can be made into a complete meal by adding browned ground beef or chicken.

Number Of Ingredients 7

1 box jiffy cornbread mix
1 stick butter or margarine (divided in 1/2)
1 c chopped onion
2 c shredded cheddar cheese
1/3 c milk
4 eggs, slightly beaten
1 (10oz) pkg chopped frozen broccoli

Steps:

  • 1. Preheat oven to 350 degrees. In oven, melt 1/2 stick of butter in a 9x13 baking dish.
  • 2. Melt the other 1/2 stick of butter in a pan or the microwave and mix in with the rest of the ingredients. Pour into baking dish and bake at 350 degrees for 30-35 minutes or until golden brown on top.

Tips:

  • Use fresh or frozen corn. Fresh corn is best, but frozen corn will also work. If using frozen corn, thaw it before adding it to the casserole.
  • Use a good quality cheddar cheese. The cheddar cheese is one of the main flavors in this casserole, so it's important to use a good quality cheese. Look for a sharp cheddar that has a strong flavor.
  • Don't overmix the batter. Overmixing the batter will make the cornbread tough. Mix just until the ingredients are combined.
  • Bake the casserole until a toothpick inserted into the center comes out clean. This will ensure that the casserole is cooked through.
  • Serve the casserole warm. This casserole is best served warm, right out of the oven. You can also reheat it in the microwave or oven.

Conclusion:

Broccoli cornbread casserole is a delicious and easy-to-make dish that is perfect for any occasion. It's a great way to use up leftover cornbread and broccoli, and it's also a great way to get your kids to eat their vegetables. So next time you're looking for a quick and easy meal, give this casserole a try. You won't be disappointed!
