1 teaspoon minced garlic (from 1 clove)
12 ounces small broccoli florets (about 5 cups)

4 packed cups baby spinach leaves
1 cup whole-milk ricotta
2 teaspoons finely grated lemon zest, plus 3 tablespoons fresh lemon juice
2 tablespoons shredded fresh basil
1/4 cup grated Parmesan
Rye crispbread, for serving

Steps:

  • Heat oil in a large skillet over medium. Saute garlic until fragrant, about 30 seconds. Add broccoli, a pinch of salt, and 2 tablespoons water; toss to combine and cook, covered, until broccoli is bright green and tender, 6 to 8 minutes. 1/8 to 1/4 teaspoon ground red pepper (cayenne), if desired
4 slices cooked and crumbled bacon

Steps:

  • Heat oven to 375° F.
  • Cook broccoli with cheese sauce as directed on bag. Remove from bag to large bowl. Using kitchen scissors, roughly cut up broccoli. I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! 1/2 lb fresh broccoli
6 ounces cream cheese, softened
2/3 cup low-fat Greek yogurt
1/4 cup apple cider vinegar
2 teaspoons sugar
1/4 teaspoon kosher salt
4 bacon, slices thick (cooked and chopped)
1/2 cup cashews, coarsely chopped
1/2 cup sharp cheddar cheese, shredded
1/3 cup red onion, minced

Steps:

  • Remove and discard large leaves and tough ends of stalks from broccoli. Peel and coarsely chop stems; coarsely chop florets.
  • Process cream cheese and next 4 ingredients in a food processor until smooth. Add broccoli; pulse 12 to 15 times or until finely chopped. Fold bacon and remaining ingredients into cream cheese mixture. Serve immediately, or chill up to 3 days.
