Steps:
- In large saucepan of boiling water, cook broccoli 1 minute. Immediately drain and rinse under cold water to stop cooking. Pat dry. Transfer half of broccoli to covered container and refrigerate until ready to serve. Transfer other half to food processor and add scallions and garlic. Pulse until finely chopped, about 10 (1-second) pulses. Transfer mixture to medium bowl.
- In same processor, combine Cheddar and cream cheese and process until smooth, about 3 minutes. Return broccoli mixture to processor, add yogurt and pepper, and pulse until blended, about 15 (1-second) pulses. Transfer to large covered container and refrigerate until ready to serve. Serve dip with reserved broccoli florets and bread sticks or pretzels.
- Transportation tips:
- For simple, elegant, cooler-to-blanket serving, refrigerate the dip in a sturdy glass bowl with a lid, such as those made by Pyrex. If you'll be serving it to a large group, use two bowls for easy passing. Transport pretzels or breadsticks in their packaging and then place them in bowl at the picnic site, or transfer them at home to a Tupperware container and use that as a serving dish as well.

HOT BROCCOLI DIP (CROCK POT OR MICROWAVE)
I love broccoli and pepper jack cheese... and this dip combines the two! This is a very quick and easy dip for parties. We like it with Frito's Scoops or tortilla chips. Leftovers are wonderful served over baked potatoes for lunch the next day. NOTE AFTER FIRST REVIEW: I have always kept this hot for serving in my mini-crockpot and haven't had trouble with it getting too thick.

Steps:
- Melt the cheese in the microwave in a large bowl.
- Add undiluted soup and mix well.
- Cook broccoli, drain, and add to the mixture, stirring well.
- Serve warm with Frito's Scoops, crackers, or tortilla chips.
- Keeps well in a crock pot on low setting (stir periodically) or just pop it back in the microwave at serving time.
- NOTE 9/11/07: I have been making this for years, but recently ran across the original recipe in an old cookbook. It turns out that the original had two cans of soup, which obviously would make a thinner dip. I'll probably still make it with one can, but if it seems thick, you might want to try two cans! :).

FESTIVE HOT BROCCOLI DIP
I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! Hope you enjoy.

Steps:
- Remove and discard large leaves and tough ends of stalks from broccoli. Peel and coarsely chop stems; coarsely chop florets.
- Process cream cheese and next 4 ingredients in a food processor until smooth. Add broccoli; pulse 12 to 15 times or until finely chopped. Fold bacon and remaining ingredients into cream cheese mixture. Serve immediately, or chill up to 3 days.
Tips:
- Use fresh, high-quality broccoli: Fresh broccoli will have a vibrant green color and tightly closed florets. Avoid broccoli that is wilted or has yellow or brown spots.
- Steam or blanch the broccoli before adding it to the dip: This will help to preserve the broccoli's鮮豔的 green color and crisp texture.
- Use a variety of cheeses: A combination of cheeses will create a more complex and flavorful dip. Some good options include cheddar, Parmesan, cream cheese, and blue cheese.
- Season the dip to taste: Add salt, pepper, garlic powder, onion powder, and other seasonings to taste. You can also add a pinch of cayenne pepper for a little bit of heat.
- Serve the dip warm: Broccoli dip is best served warm, so make sure to heat it through before serving. You can also top the dip with shredded cheese or crumbled bacon before serving.

Broccoli dip is a delicious and versatile appetizer that is perfect for any occasion. It is easy to make and can be tailored to your own personal taste.
