Steps:
- For each of the above combinations, place all ingredients except for the feta in a small saucepan and gently heat over medium low just until tiny bubbles begin to form, 4 to 6 minutes. Remove from the heat and allow to cool completely, about 1 hour.
- Once the infused olive oil is cool, transfer half of the aromatics from the saucepan to a 16-ounce Mason jar followed by half of the feta. Repeat layering and then carefully pour the infused olive oil into the jar. Gently press the feta down if needed to ensure it is fully submerged and seal the jar with its lid (see Cook's Note). Place the jar in the refrigerator and allow the feta to marinate for at least 12 hours and up to 5 days.
- Remove the jar from refrigerator at least 30 minutes before serving to allow the solidified olive oil to liquify.
BROILED FETA-SAGANAKI
Use cooking times as guidelines and check the feta often as it cooks. Cutting the feta into 1/2-inch-thick slabs is crucial here; if sliced thinner, the cheese will crumble apart, but if sliced thicker, it will not heat through. Serve with wedges of warm pita bread

BROILED CHICKEN THIGHS WITH ORANGES, FENNEL AND GREEN OLIVES
It's important to use smaller chicken thighs; if all you can get are the larger ones, it's best to cut them in half. If you don't have Maras pepper, it's worth buying, since its distinctive flavor will add depth and a sly heat to all kinds of dishes.

Steps:
- Heat the broiler (to high if you have the option).
- Combine the fennel, onion, olives, garlic, Maras pepper and 2 tablespoons oil in a large bowl, sprinkle with salt and pepper and toss gently. Spread this mixture in a 9-by-12-inch baking dish or disposable foil pan and scatter orange sections on top.

- Place under broiler with pan about 4 inches from the flame and broil for 10 minutes, turning pan front to back after 4 minutes. Turn chicken skin side up and continue to broil, switching pan back to front after about 3 minutes and broiling until the skin is crisp and dark brown and the chicken is opaque throughout (or until center of flesh registers 165 degrees on instant-read thermometer), 5 to 7 minutes more. Serve with crusty bread or couscous to soak up the juices.

Steps:
- Preheat the oven to 425˚F.
- Slice the pearl tomatoes horizontally (each one in four pieces) and place on paper towels to drain. (If you are using one large tomato, cut the end pieces and slice the rest in six slices). After 3-4 minutes, turn them over and place on new paper towels. Cut the pepper into four rings and set aside.
- Oil well a small, shallow ceramic baking dish (or four individual ceramic ramekins) and place half of the tomato slices at the bottom. Sprinkle with some sea salt and crushed pepper flakes. Top with half the bell pepper slices.
- Arrange the two Feta pieces on top of the tomato/pepper layer, place the remaining tomato slices on top of each piece of cheese, and place the rest of the bell pepper rings on the tomato. Drizzle liberally with the extra virgin olive oil, sprinkle with oregano and some more pepper flakes, and transfer to the middle of the oven.
- Bake for about 25 minutes, or until the feta turns a light-golden color and the oil is sizzling. If you want to deepen the color, you can place the dish under the broiler for 1-2 minutes at the end of the cooking time.
- Brush some olive oil on the slices of good, multigrain bread, and grill on both sides. Serve the baked feta immediately with some warm grilled bread.

Recipes for Broiled Feta with Oranges
Preparation
- Select fresh oranges and ensure they're ripe and juicy.
- Use firm and cold feta cheese. You can cut it into cubes or crumble it, depending on your liking.
- Honey and orange zest add a beautiful sweetness and citrusy aroma. Alternatively, you can use granulated sugar if you don't have access to oranges.
- Pistachios offer a delightful crunch and a lovely green hue. Feel free to use any other favorite roasted or salted whole or slivered toasted walnuts.
Cooking
- Ensure the mixture of oranges and feta is not watery. If it is, carefully pour out some of the citrus juices before broiling.
- Keep an eye on the broiling progress to avoid scorching the cheese and the citrus. Once you see the top layer bubbling and slightly golden, remove the dish from the heat.
- Be careful not to over-broil, as this can result in a burnt dish instead of the intended slightly charred effect.
Conclusion
This flavorful dish, with its harmonious combination of sweet, tangy, and salty flavors, comes together quickly and easily. With its vibrant colors and textures, it's sure to impress your guests. Serve it as an appetizer, add it to your cheeseboard, or incorporate it into your salads, and enjoy a culinary journey that will keep them craving more. Bon appétit.
