BROILED ORANGE ROUGHY

Broiled Orange Roughy image

You can use perch, cod, whiting, or any other raw fish that comes in filets.

Provided by Teresa Malkemus

Categories     Fish

Time 17m

Number Of Ingredients 4

orange roughy; enough for one filet each.
2 Tbsp melted butter
1-2 tsp concentrated lemon juice
salt and pepper to taste

Steps:

  • 1. Let fish thaw then place on a lightly greased baking sheet.
  • 2. Mix melted butter and lemon juice together. Spread over each filet with a brush or spoon.
  • 3. Set oven temperature to broil and insert the baking sheet. After two minutes, pull out the baking sheet and turn over filets. Baste with lemon butter. Re-insert into the oven and broil until tender and flaky.

Tips:

  • Choose the freshest orange roughy fillets possible. Look for fillets that are firm and have a bright orange color. Avoid fillets that are slimy or have any off-odor.
  • Pat the fillets dry before cooking. This will help to prevent them from sticking to the pan and will also help to create a crispy crust.
  • Season the fillets liberally with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Broil the fillets for 8-10 minutes per side, or until they are cooked through. The fillets should be opaque in the center and should flake easily with a fork.
  • Serve the fillets immediately with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.

Conclusion:

Broiled orange roughy is a quick and easy weeknight meal that is sure to please the whole family. The fish is flaky and moist, and the crispy crust is full of flavor. Serve it with your favorite sides and you have a delicious and healthy meal that everyone will love.
