Number Of Ingredients 5

4 small salmon steaks (5 to 7 oz. each)
1/4 cup Worcestershire sauce
1 tablespoon Dijon mustard
1 dash Tabasco sauce
2 tablespoons minced parsley, for garnish

Steps:

  • Rinse the salmon steaks and pat dry with paper towels.

  • Set the oven rack 3 to 4 inches below the element and preheat the broiler.
  • Line the broiler pan or baking sheet with a piece of foil and lightly oil the foil.

  • Broil the salmon until lightly browned, 3 to 5 minutes.
  • Take the pan from the oven, turn the steaks and spoon on some of the reserved marinade.

Yield 4 servings

Number Of Ingredients 4

Four 6-ounce salmon steaks
2 tablespoons olive oil, turning to coat
Salt and pepper
Roasted Poblano and Caper Salsa

Steps:

  • Heat broiler. Place four 6-ounce salmon steaks on a broilerproof baking sheet. Drizzle with 2 tablespoons olive oil, turning to coat; season with salt and pepper. Broil until cooked through but still slightly translucent in the center, 5-7 minutes.
  • Serve with Roasted Poblano and Caper Salsa.

Tips:

  • Choose high-quality salmon steaks. Look for steaks that are firm with bright, vibrant color.
  • Season the salmon steaks simply. Salt, pepper, and a squeeze of lemon juice is all you need to bring out the natural flavor of the salmon.
  • Cook the salmon steaks over high heat. This will help to create a crispy crust and a tender, flaky interior.
  • Broil the salmon steaks for 8-10 minutes per side, or until they are cooked through. The salmon is cooked through when it flakes easily with a fork.
  • Serve the salmon steaks immediately with your favorite sides. Some popular sides for salmon include roasted vegetables, mashed potatoes, or rice.
