BROWN SUGAR AND SPICE DRY HAM RUB

I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.

Tips:

  • Choose the right ham. A bone-in ham will give you the best flavor and texture. If you're using a boneless ham, be sure to score the fat cap so that the rub can penetrate the meat.
  • Make sure the ham is completely thawed. If the ham is frozen, it won't absorb the rub properly. Thaw the ham in the refrigerator for 2-3 days, or overnight in a sink filled with cold water.
  • Pat the ham dry. Before applying the rub, pat the ham dry with paper towels. This will help the rub adhere to the meat.
  • Rub the ham generously with the rub. Use your hands to rub the rub into the ham, making sure to get into all the nooks and crannies. You can also use a pastry brush to apply the rub.
  • Let the ham rest for at least 30 minutes. This will allow the rub to penetrate the meat and develop its flavor. You can let the ham rest for up to overnight.
  • Cook the ham according to the recipe. The cooking time will vary depending on the size of the ham and the cooking method you're using.

Conclusion:

Brown sugar and spice dry ham rub is a delicious and easy way to add flavor to your ham. With just a few simple ingredients, you can create a rub that will give your ham a sweet, smoky, and savory flavor. Whether you're cooking a ham for a holiday meal or just for a weeknight dinner, this rub is sure to be a hit.
