BROWN SUGAR WINGS

Brown Sugar Wings image

My mother in law used to serve heaps of these at least once a week. She use to love it because wings were very cheap in those days and there was enough to feed the entire family and then some. Now wings are just as expensive as other chicken pieces. I cut the wing tips off and freeze them to use for broth at some other time.

2 cups dark rum
1 tablespoon ancho chili powder
Pinch ground chili de arbol
3/4 cup dark brown sugar
Pinch salt
2 tablespoons unsalted butter, cut into small pieces
Peanut or canola oil
2 tablespoons ground coriander
2 tablespoons ground ginger
2 tablespoons light brown sugar
1 tablespoon onion powder

1 tablespoon kosher salt, plus more for seasoning
1 tablespoon habanero powder
2 teaspoons coarsely ground black pepper, plus more for seasoning
2 teaspoons dried thyme
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
3 pounds chicken wings, split at the joint, wing tips removed and discarded
Chopped cilantro leaves, about 2 tablespoons
Chimichurri Sauce, recipe follows
1 cup fresh cilantro leaves
1 cup fresh flat-leaf parsley
1/2 cup fresh mint leaves
1 clove garlic
2 tablespoons red wine vinegar
2/3 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Whisk together the rum, ancho powder, chile de arbol, brown sugar, and salt in a medium saucepan. Bring to a boil over high heat and cook until reduced by half. Remove from the heat, and then add butter.
  • Heat 2 inches of oil in a large high-sided pan until it reaches 365 degrees F on a deep-fry thermometer.

Season the wings with salt and pepper and toss them in the jerk rub. Add the wings, in batches, to the oil and cook until golden brown and cooked through, 8 to 10 minutes. Remove them with a slotted spoon and put them on a plate lined with paper towels to drain for a few minutes, and then transfer the wings to a large bowl.
  • Add the brown sugar-rum glaze and chopped cilantro and toss to coat each wing. Serve with the Chimichurri Sauce.
  • Combine the cilantro, parsley, mint, garlic, and vinegar in a food processor and pulse until coarsely chopped. With the motor running, slowly add the oil through the feed tube until smooth. Add salt and pepper, to taste, and pulse a few times until combined.

About halfway through the baking process, rotate the wings/chicken and finish cooking. Smells delicious, tastes delicious and is ready in less than 30 minutes. Sprinkle wings with a little parsley or cilantro to add a little greenery to the plate Notes: Rubber gloves are a good idea, if you don't want to get the chicken and red coloring all over your skin. You need to toss with your hands. Otherwise... good old-fashioned soap and hot water will clean you up just fine! Don't be afraid of the chicken. Just use clean hands before handling. Can use boneless chicken cut up into bites for this recipe.

BAKED BROWN SUGAR CHICKEN WINGS (SERVES 3-4) RECIPE - (3.9/5)

Baked Brown Sugar Chicken Wings (serves 3-4) Recipe - (3.9/5) image

Provided by suepeasley

Number Of Ingredients 8

2 lb. chicken wings
3 tbsp. olive oil
2 tbsp. brown sugar
2 tsp. garlic powder
2 tsp. chili powder
2 tsp. paprika
1 tsp. kosher salt
1 tsp. ground black pepper

Steps:

  • Preheat oven to 425 degrees. Line a baking sheet with foil (for easy clean-up), and spritz the foil with cooking spray. In a large bowl, mix together all ingredients except wings. Add wings and mix with your hands so the wings are coated with the spice mixture. Spread wings in a single layer on baking sheet. Bake for 25 minutes (use tongs to flip them halfway through).

Tips:

  • Use a good quality brown sugar: Dark brown sugar has a richer flavor than light brown sugar, so it's a good choice for this recipe.
  • Don't overcook the wings: The wings should be cooked through, but not overcooked. Otherwise, they'll be tough and dry.
  • Make sure the sauce is thick and sticky: The sauce should be thick enough to coat the wings, but not so thick that it's difficult to pour. If the sauce is too thin, add a little cornstarch or flour to thicken it.
  • Serve the wings hot: Brown sugar wings are best served hot and fresh out of the oven. You can also reheat them in the oven or microwave, but they won't be as crispy.

Conclusion:

Brown sugar wings are a delicious and easy-to-make appetizer or main course. They're perfect for parties or game day gatherings. With a few simple ingredients, you can create a dish that everyone will love. So next time you're looking for a new recipe to try, give brown sugar wings a try. You won't be disappointed!
