Time 55m

Yield 3

Number Of Ingredients 7

2 pounds pork tenderloin
salt and pepper to taste
¼ cup whole grain mustard
¼ cup light brown sugar
2 teaspoons fresh thyme leaves, minced
1 yellow onion, thinly sliced
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven to 350 degrees F.
  • Generously season tenderloin with salt and pepper. Set aside. In a small mixing bowl, whisk together mustard, brown sugar and thyme.
  • Place a large sheet of Reynolds Wrap® Aluminum Foil onto a baking sheet. Place onion slices in the center of the foil, in a single layer. Place pork over the onions and brush with 1/2 of the mustard mixture.
  • Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Bake for 40-45 minutes or until the internal temperature reads 130 degrees F.
  • Remove from oven. Open packet carefully by cutting along top fold with a sharp knife, allowing steam to escape. When uncovered, brush with remaining mustard mixture. Leaving the packet open, broil for about 1 minute or until a nice crust forms on top. Remove from the oven and allow tenderloin to rest for 10-15 minutes before slicing and serving.

Time 1h15m

Yield 8

Number Of Ingredients 11

½ cup brown sugar
½ cup water
¼ cup balsamic vinegar
2 tablespoons soy sauce
1 tablespoon cornstarch
2 cloves garlic, crushed
1 ½ teaspoons ground sage
¾ teaspoon salt
¼ teaspoon pepper
2 (1 1/2 pound) pork tenderloins
1 tablespoon olive oil, or as needed

Steps:

  • Combine brown sugar, water, balsamic vinegar, soy sauce, and cornstarch in a small saucepan over medium heat. Cook, stirring constantly, until mixture thickens, 4 to 6 minutes. Remove from the heat and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking sheet.
  • Combine garlic, sage, salt, and pepper in a small bowl. Rub garlic mixture over pork tenderloins.
  • Heat oil in a large skillet over medium-high heat. Arrange tenderloins in the skillet and brown evenly, 2 to 3 minutes per side. Transfer pork to the prepared baking sheet and brush with the balsamic glaze.
  • Bake in the preheated oven for 20 minutes. Turn pork, brush again with glaze, and continue cooking until pork is slightly pink in the center, about 20 minutes more, or until desired doneness. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Remove tenderloin to a platter. Allow to rest for 10 minutes. Drizzle a little extra glaze over the top. Carve and serve with remaining glaze on the side.

SPICE AND BROWN SUGAR-RUBBED PORK TENDERLOIN

Spice and Brown Sugar-Rubbed Pork Tenderloin image

Serve this flavorful pork tenderloin from food writer J.M. Hirsch's "High Flavor, Low Labor," then use the leftovers to make his Pulled-Pork Sandwich recipe.

Provided by Martha Stewart

Number Of Ingredients 14

2/3 cup packed light-brown sugar
1/4 cup pink peppercorns
1 tablespoon coarse salt
2 teaspoons dried oregano
2 teaspoons dried rosemary
1 teaspoon ground cinnamon
1 tablespoon black sesame seeds
2 teaspoons dried diced onion
2 teaspoons dried parsley
2 (12-ounce) pork tenderloins, silver skin removed
2 large yellow onions, chopped
1/2 cup packed light-brown sugar
1/4 cup coarse salt
3 cups ice cubes

Steps:

  • Make the seasoning blend: In a small bowl, mix together all ingredients. Transfer half of blend to a large saucepan; set remaining seasoning blend aside.
  • Make the brine: Add 3 cups water, brown sugar, and salt to saucepan with seasoning blend. Set pan over high heat and bring to a boil; cook until sugar and salt have dissolved. Remove from heat; add ice and stir until cooled.
  • Make the pork loin: Place pork in a large resealable plastic bag. Add brine to bag; seal and refrigerate for 3 to 6 hours.
  • Preheat oven to 375 degrees.
  • Scatter onions over bottom of a roasting pan. Remove pork from brine; pat dry with paper towels. Rub reserved seasoning blend over tenderloins and place pork on top of onions. Transfer to oven and roast until pork reaches 145 degrees on an instant-read thermometer, about 30 minutes.
  • Let pork stand in roasting pan 15 minutes before slicing and serving.

Tips:

  • For the best results, use a meat thermometer to ensure that the pork tenderloin is cooked to an internal temperature of 145 degrees Fahrenheit.
  • If you don't have a meat thermometer, you can also cook the pork tenderloin until the juices run clear when you insert a knife into the thickest part of the meat.
  • Be sure to let the pork tenderloin rest for 10-15 minutes before slicing and serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.
  • Serve the pork tenderloin with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Brown sugar pork tenderloin is a delicious and easy-to-make dish that is perfect for any occasion. Whether you're serving it for a weeknight dinner or a special occasion, this dish is sure to please everyone at the table. So next time you're looking for a simple and flavorful pork recipe, give brown sugar pork tenderloin a try. You won't be disappointed!
