BROWNED ( FRANCONIA) POTATOES
From The Joy of Cooking. I have used fingerling and baby red potatoes when I made this. I decreased the oil and butter to 2 tablespoons each and still had an over abundance of each, but the recipe follows as it was presented in the cookbook.

Steps:
- Boil the potatoes in salted water until almost cooked through - they should still offer some resistance to the tip of a sharp knife. Drain the potatoes and place them in a covered baking dish with the butter. Cook covered in a preheated 350F (180C) oven, turning and basting the potatoes occasionally, until evenly browned, about 20 minutes. Season with salt and pepper before serving. Serves 4 to 6.
Tips:
- Use a cast-iron skillet. A cast-iron skillet will give your potatoes a nice, crispy crust.
- Use high-quality potatoes. Yukon Gold or Russet potatoes are good choices for this recipe.
- Slice the potatoes thinly. This will help them cook evenly.
- Season the potatoes well. Salt, pepper, and garlic powder are all good choices.
- Don't overcrowd the skillet. If you overcrowd the skillet, the potatoes will not cook evenly.
- Cook the potatoes over medium heat. This will help them cook through without burning.
- Stir the potatoes occasionally. This will help them cook evenly.
- Cook the potatoes until they are browned and crispy. This will take about 15-20 minutes.
- Serve the potatoes immediately. They are best when served hot.
Conclusion:
Browned Franconia potatoes are a delicious and easy-to-make side dish. They are perfect for any occasion, from a casual weeknight dinner to a special holiday meal. With a few simple ingredients and a little bit of time, you can create a dish that your family and friends will love.
