I created this recipe with inspiration from a really good traditional fudgy brownie recipe and the techniqes I've learned from Barbara Cousins (Cooking Without series). They are quite good, just not right out of the oven. The batter tastes lovely and they are chocolatey when they are cool. I didn't create these as allergy free, but to meet the health choices we have made, not eating wheat or sugar, or using milk. Sorry to disappoint anyone!

120 g dates
100 ml water
150 g butter
1 teaspoon vanilla
2 eggs
45 g cocoa powder
75 g porridge oats

Steps:

  • Preheat oven to 175°C/325°F.
  • If you have a food processor or chopper, chop the oats until fine.
  • Heat the dates and water on low until the water is absorbed and the dates are soft.
  • Allow the dates to cool a bit, then stir in or process the dates with the butter.
  • Add the vanilla and eggs, then the cocoa powder and oats, stirring or processing until combined.
  • Bake in a small pan (about 9"x7") for 15 minutes. Brownies will be cooked, but fudgy.
  • For the best taste, enjoy them cooled.

1 cup vegan semi-sweet chocolate chips
¼ cup canola oil
2 eggs, beaten
2 teaspoons instant coffee granules
½ cup white sugar
⅓ cup cocoa powder
⅓ cup gluten-free flour
⅛ teaspoon baking soda
1 tablespoon coffee-flavored liqueur
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat chocolate with canola oil in a large glass bowl in a microwave oven in 30 second increments, stirring between each round of heating, until completely melted, 2 to 3 minutes.
  • Stir eggs and coffee granules into the melted chocolate. Sift sugar, cocoa powder, flour, and baking soda together into a bowl; add to chocolate mixture and stir to incorporate fully. Pour coffee liqueur and vanilla extract into the mixture; stir.
  • Pour brownie batter into an 8-inch square baking dish.
  • Bake in preheated oven until beginning to dry along the edges, 20 to 25 minutes.

Brownies like they should be, without any gluten or casein. This is my standby, easy-as-pie brownie recipe, that is really easy to add anything you like into. I use a mix of Bob's All Purpose Gluten-free blend and a little starch for the total of 1/2 c. gluten-free flour. I've made these vegan with egg-replacer.

1/2 cup unsweetened cocoa powder
1/2 cup dairy-free margarine, melted
1 cup sugar (I use 3/4 to a cup, as they can get pretty sweet!)
2 eggs
2 teaspoons vanilla extract
1 teaspoon chocolate extract
1/2 cup gluten-free flour
1 teaspoon xanthan gum
1/8 teaspoon salt
1/2 cup non-dairy chocolate chips

Steps:

  • Preheat oven to 350°F.
  • Lightly grease an 8x8 pan and set aside.
  • In a small bowl, mix together flour, xanthan gum and salt. Set aside.
  • In a large bowl, stir together cocoa and margarine 'til well combined.
  • Mix in sugar until completely saturated.
  • Break egg into a small bowl, then mix completely into cocoa mixture. Do the same with the second egg.
  • Stir in extracts.
  • Mix in flour, combining completely but not overmixing.
  • Stir in non-dairy chocolate chips.
  • Bake for 20-22 minutes, checking with a toothpick for doneness.
  • Let cook in pan, then remove and eat it. Don't share.
