1/4 cup olive oil
8 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1 package (5.3 ounces) fresh goat cheese, crumbled

  • Preheat oven to 425°. Toss first five ingredients; spread in a greased 15x10x1-in. pan. Roast until tender, 20-25 minutes, stirring occasionally. Transfer to a bowl; toss with cheese.

1-1/2 pounds fresh Brussels sprouts
2 teaspoons olive oil
3 teaspoons butter, divided
4 garlic cloves, chopped
1/2 cup reduced-sodium chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Trim Brussels sprout stems. Using a paring knife, cut an "X" in the bottom of each., In a large saucepan, heat oil and 1 teaspoon butter over medium heat. Add garlic; cook and stir 1-2 minutes or until garlic begins to color. Immediately add Brussels sprouts, stirring to coat., Stir in broth, salt and pepper; bring to a boil. Number Of Ingredients 6

4 cups fresh brussels sprouts
Salt to taste
4 to 8 tablespoons butter, as desired
2 or 3 crushed garlic cloves (or to taste)
Juice of 1/2 lemon, or to taste
Grated Parmesan cheese, to taste

Steps:

  • Cook the brussels sprouts, uncovered, in water salted to taste until they are just tender, not soft. Drain, shock under cold water, drain again and set aside until needed.
  • Melt the butter in a deep pot over low heat and saute the garlic briefly until soft but not browned. Stir in the lemon juice and set the mixture aside till needed.
  • At the last minute, heat the butter-garlic-lemon mixture, add the brussels sprouts and toss gently until heated through. Add the grated cheese, toss lightly once again and serve
